Hooray! A new box!

I picked up a new produce box tonight over at the drop-off point at the community center around the corner. Here's what I got:

fingerling potatoes
yams
beets
grapefruit
oranges
avocados
peppers
clementines
kiwi
tomatoes
mushrooms
lettuce

Only the potatoes, beets, and mushrooms were grown around here, but I am okay with that seeing how it is all organic and I am confident that they select sources of which I would approve (I've looked into it). Anyway, blah, blah, blah....

What should I make? I'm looking for some ideas!

salsa,guacamole(SP?)fruit salad. Yum they all sound good.

In NYC last week, at a long-time East Village vegetarian restaurant, I had a Warm Roasted Vegetable Salad. You could roast the root veg, make an orangey vinaigrette, and put it on top of mixed greens. I'm still dreaming about the salad. Savory Roasted Root Vegetables on AR seems very close.

Toss the potatoes & chuck cut yams together with some fresh squeezed citrus juice, olive oil, & fresh cilantro - roast it off - yum. Wish I could get fingerling potatoes here. Stuff a half avacado with cottage cheese & top with the mandarins - or better yet roast your beets/cool slice pretty & alternate the slices with avacado & any of the citrus & drizzle with a nice raspberry vinegrette (Newmans is pretty good) - side of lettuce & would make a pretty salad.

I read that list of ingredients and then where you from and wondered "how in the world?" So, I came to see what was cooking. Looks like you got some great ideas. Personally, I'm found of avocado and citrus mixed with a little of the fresh beets steamed lightly. Add a thinly sliced onion and if you have some balsamic vinegar and some honey mixed to thin drizzle put that over the top of it all. Hope you enjoy whatever you make.
