I made sweet potato latkes and polenta egg puffs for brunch. I'd been thinking about the puffs since yesterday: 1 slice polenta topped with 1 slice tomato, beaten egg, and Cheddar cheese. Baked for about 20 minutes at 350 F. They were great with salsa.
