I love to cook. I believe in "eating your mistakes" which accounts for my size....hehe But I am learning to cook healthier meals that my family likes and that don't cause me to buy new pants.
My favorite things to cook
Cookies!!! I love making cookies with my girls. But on a daily basis, I enjoy anything that uses what I have in the pantry, and can be made in 30 min or less.
My favorite family cooking traditions
Being from an overweight, Polish, family....We love cooking together. Christmas, Thanksgiving and even Easter is a time for the kitchen to fill with people and aromas.
My cooking triumphs
As silly as it may sound...I look at the spices when I go shopping and try to find recipes that use a different spice... My goal is to use all of them. But when I finally found a recipe that used Tarragon...I was thrilled.
My cooking tragedies
pie crust...I know, it should be easy... But I can not make a good pie crust. I have probably 5 recipes that people have given me for basic pie crust.... No luck. So for now, I buy ready made and save myself the headaches!

Sweet And Sour Glazed Chicken
This was very good. I used boneless skinless chicken breast, but other than that, I followed the recipe exact. ( I think I may use more onion next time.) My family loved it!

Pina Colada Pork Chops
I thought that this was a great "root" recipe. I added garlic, onion, and a whole lime to the coconut milk. I pan fried the boneless pork chops until brown and then poured in all of the milk. Covered and simmered until done. The pork chops were very, very tender. I will make this again.

Stuffed and Wrapped Chicken Breast
This recipe is so easy and tasty, I usually get my kids to help me with it. I do suggest that you line your cookie sheet with Reynolds easy release foil. It really makes clean up so nice... And make sure to turn the broiler on at the end of the cooking to crisp up the bacon.
