Grilled Sausages with Caramelized Onions and Apples
REALLY good! I made this with Bangers instead of brats. I'm not a fan of sausage, but the apples & onions were a wonderful addition. It would also be good on a pork chop.

Ropa Vieja in a Slow Cooker
Pretty good, & definitely easy. We (husband & I) decided there was something missing, but couldn't put our fingers on it. My 14 month old loved it!

Mexican Lasagna
This is a frequent staple in our house. Sometimes I mix it up and will use a green salsa, & have even added black beans as a layer. Yum!
