Baby Back Ribs
This was the first time I ever made ribs. This recipe was so simple and worth the time to cook them slowly for tenderness. I did not marinade my ribs in barbeque sauce for 8 hours, like suggested due to time. I simply grilled the ribs first for about 20 minutes total over low heat. Then I made the foil packs and put a bit of sauce over the ribs before wrapping them up. Then popped into a 275* oven for 2 hours. They were falling off the bone tender. Delicious!

Spinach Bars
The key to making this dish firm and done in 30 minutes is to make sure you drain the spinach very well. I defrosted my 16 oz. bag of spinach for 4 minutes in the microwave and then put it in a colonder and pressed with the back of a big spoon until most of the water was out. I also cut the cheese to 2 cups and added 1 cup feta. Delicious! My family all loved it.
