Janet's Rich Banana Bread

Made this with substitutions so it was a more healthful bread (egg sub, butter sub, fat free sour cream), but it was still delicious! Sticky, sweet crust, moist on the inside. Yum!

Really good, added some spices. The only bad thing is that it is one of those foods that smell when they are cold or heating up. Leftovers taste great, smell bad.

Peach-a-Berry Pie

We love this pie! I use two cans carb-friendly peaches and one little container (about a cup) of fresh raspberries. Now I just need to perfect pie crust and it will be perfect!

Restaurant Style Egg Drop Soup

I actually think it could use a little more ginger, and it turned out awesome! I can't wait to have the leftovers for dinner tomorrow! Even my fiance, who isn't a fan of soup, said it was pretty good (rave review for him).

This had some heat, and I didn't even add the red pepper flakes! I nixed the cauliflower, added red wine, and halved the beef broth. I used the crockpot (browned beef first) and threw everything in on low to cook all day. DELISH.

Roasted Asparagus and Mushrooms

Next time I will definitely use fresh rosemary as called for--I used dried and it got too crunchy. My fiance and his brother were eating it, but scraping off the rosemary first insisting it was like eating pine needles! Melodramatic...

Sooooo good! Spicy and great! Didn't change a thing, I just made 1/3 of original recipe. Will add minced garlic next time instead of garlic powder. Wonderful!

Will use homemade salsa in the future--jarred salsa was a little soupy. Otherwise, sooo good!!!! Added a can of diced tomatoes w/jalapenos and two cans of chopped chiles. MMMMM.

Slow Cooker Lasagna

This was a smash hit! I used a couple more oz of ricotta, a little less mozzarella, and layered it in rather than mixed it. I used about a half of a 9oz box of no-boil lasagne noodles, and they didn't turn out gummy at all! I seasoned each layer of sauce with parsley, basil, and oregano, and left it in the slow cooker for 2 hours on low, then put it on high for one more hour. Awesome, and I love the crockpot idea!!!

Old German Honey Cookies

These cookies are so soft! I made bigger balls with my hands (the first batch with teaspoon-measured cookies got too crispy). I split up the sugar between white and brown, and then did 1/2 tsp nutmeg and 1/2 tsp ginger (next time I'll try a whole tsp of ginger instead. So yummy!

Best Big, Fat, Chewy Chocolate Chip Cookie

The cookie batter was classic chocolate chip cookie dough...yum! However, DO NOT USE A FULL 1/4 CUP TO MEASURE. I did and I had cookie dough dripping off the pan because they were ridiculously huge.

Slow Cooker Chicken and Dumplings

MMM, this was so good! I used 6 breast halves, seasoned them with salt, pepper, and poultry seasoning, and lined them on the bottom. I minced about half an onion and mixed it in with the soup separately with an 8oz pack of fresh mushrooms. I liberally seasoned the top with thyme, and let cook for 8 hours, then added only about a third of a 16oz biscuit roll (that was plenty!). They cooked for an hour and a half and were cooked through, but weren't moist throughout. Served on brown rice. AWESOME.

Basil Cream Sauce

I've made people into pesto believers with this sauce (though when you add cream to anything, it's pretty much a winner). Awesome with chicken, could even work with italian sausage. So good and well worth the work!!

Monkey Bread I
