I just completed my first year of university and am looking forward to having my only little apartment with a small kitchenette for the very first time in August. One of my favorite things to do is surprising my twin sisters and parents with hot baked goods when they arrive home from school and work in the afternoon. My favorite food is Korean, particularly from Grill Time in Toronto.
My favorite things to cook
I really enjoy baking (almost on a daily basis!), experimenting with homefries and making chicken dishes (particularly stir-frys). I'm always looking for a quicker/easier way to do something because of my hectic lifestyle and unwillingness to do lots of dishes!
My favorite family cooking traditions
I look forward to Thanksgiving and Christmas each year when I help my dad make his famous rich, buttery turkey stuffing - with lots of extra helpings left-over for days' worth of warm-ups! I also love baking simple chocolate chip cookies with my twin sisters, and icing cakes' for various family members' birthday. Lastly, I love making creative and crafty meals in the kitchen of my residence building with my boyfriend - some of which have turned out better than others, but were all fun to make!
My cooking triumphs
I make mean shortbread strawberry jam thumbprint cookies, an excellent sourcream berry cake, and great banana quick breads. Some of my best easy dinner recipes are fajitas, gnocchi with grilled chicken, parmesan-breaded chicken fingers, and assorted grilled sandwiches.
My cooking tragedies
I have had nothing but negative experiences attempting to use Splenda in my baking, and am still trying to tweak things so that they rise correctly. I also made the mistake of using a soft plastic spatula to flip my tilapia one night, and will certainly never try that again!

Lemon Raspberry Cake
This cake was absolutely FABULOUS, but definitely labour-intensive. I only had 3 square pans, but would invest in a 3rd round pan just to be able to make it round, because icing the square was a nightmare. I found the layers incredibly thin and decided not to cut them any further. I just made the jam layers nice and thick to offset the thicker cake layers. Overall, an AMAZING cake, and best if refrigerated overnight before serving.

Best Big, Fat, Chewy Chocolate Chip Cookie
My family loves chocolate chip cookies, but these did not go over well with anyone. Despite following all of the directions exactly and chilling the dough before baking, these spread out way too much, and there was nothing soft or chewy about them. I found the brown sugar over-powering, and the texture was extremely dry.

Blueberry Buckle
LOVE this! I used a frozen mix of unsweetened berries (strawberries, raspberries, blueberries & blackberries) in the batter. It was absolutely to die for!
