My favorite things to cook
I love making new recipes. My most challenging thing is finding foods my 5 year old will eat! Trying to lose this baby weight so I am eyeing healthier recipes most of the time!

Mango Lemon Sorbet
I had a couple of mangoes that I needed to use up so when I cam across this recipe I had to try it! I did alter a couple of things. I cut the sugar down to 2/3 cup and I added 2 tsp vanilla. I do not have an ice cream maker so I used a tupperware container with a good tight lid. The sherbert froze well after I take it out of the freezer I let it thaw for about 5-7 minutes and it scoops up nicely. This tastes great by itself and for a more indugent treat you can add a scoop of vanilla ice cream. My kids loved this. I even gave a little to my 7 month old (in his mesh feeder) and his face just lit up, he is definately a fan! Thanks for a great recipe!

Blueberry Zucchini Bread
I have made regular zucchini bread which is always yummy but when I had a lot of blueberries on hand I found this recipe was worth a shot. I am so glad I tried it! The blueberries complimented the zucchini bread so nicely. I used 3/4 cup of oil and 2 cups of sugar. I also used 3 cups of zucchini and it came out perfect. Thank you for this yummy recipe, I will add this to my favorites!

Moroccan-Style Stuffed Acorn Squash
I was a little hesitant on trying this recipe because there was no meat in it. We had it for dinner and my husband and I LOVED it! The only change I made was i used a box of Toasted Pine Nut seasoned cous cous. It turned out FABULOUS! I will definately be making this again! Thank you for such a great recipe!!
