Baked Potato Soup
This soup was awesome, I did double the recipe and added 2 more potatoes. I baked the potatoes with the skin on, rubbed with olive oil and sprinkled with salt and pepper. I left the skins on,which gave it more flavor. I'm so glad that I doubled the recipe, the leftovers were even better! Since I doubled the recipe I only used 1 tsp. of basil.Most important, my husband really! liked it.
