Zesty Slow-Cooker Italian Pot Roast

This came out GREAT! I made a few tweaks, when my potatoes all had eyes growing from them! Did a sliced onion, and opened a jar of button mushrooms....but the sauce was fantastic...it did need salt, but this is definitely a keeper!

Apricot Glazed Carrots

Just made these tonight as an extra Thanksgiving side....they were FANTASTIC! I used orange juice instead of lemon, and everyone loved them. Easy, quick, and very tasty!

Pesto Polenta Lasagna

Had this at a brunch last weekend. It was yummy, and good thing the hostess had two pans of it.
