Baked Potato Soup I

A very hearty soup - great for the fall! I modified it a bit, using other reviews for guidance. I combined 4 tsp cornstarch with 1.5 cups of whole milk in a crockpot. After baking the potatoes and frying the bacon (only had 5 slices) - I coarsely mashed the potatoes and put all of the crumbled bacon in the soup. I finely diced 1/3 cup of celery, 1/2 cup of white onion, and one large clove of garlic. I sauteed the garlic and onion in the bacon grease before adding to the soup. I added parsley, paprika, salt & pepper to taste - and then finally added 2 cups of skim milk and 1 T of butter. I set the crockpot on medium and cooked the soup for 3 hours - stirring once in a while. It turned out great (don't forget to top it with cheddar cheese) -yum!

Buffalo Chicken Dip

This is my favorite dip, my mouth waters just thinking about it. I did add some crushed pepper and garlic powder while cooking. YUM, YUM, YUM!

Slow-Cooked Tamale Casserole

This recipe is awesome and easy. I used 1 cup of milk and a little extra cornmeal to get the right consistency. I kept the corn mix seperate (from the meat and tomato mix) - and next time I will put half the corn mix on the bottom first, put the meat mix over that, and finally, pour on the rest of the corn mix over that. Cook this recipe on medium/low and it will turn out perfectly. I used shredded chicken breasts and jalapenos and it was still pretty darn good. It reheated well the next day and I cannot wait to make it again! Thank you!

Southern California Cioppino

This is an absolutely phenomenal recipe. It is expensive to make, but it's certainly worth it. I did not use any chili powder or crab. I put in a small lobster tail and cod (instead of halibut), used only 1/2 pounds of clams and mussels to save a bit of money. Finally, I doubled the cayenne - we really like our Ciopinno to have a nice KICK! I served it up with sourdough bread and brut champagne. It was awesome! 10 STARS!

No Bake Peanut Butter Bars

Make this recipe, and people will ask for more. It is one of the best desserts I have ever had. I noticed that these bars are best served chilled. They seem to get a bit messy when they get to room temperature. However, it doesn't matter because THEY ARE SO GOOD!

OREO® and Fudge Ice Cream Cake

This recipe was so fun and simple to prepare. My husband and son couldn't get enough of it. I actually used 20 mini oreos, making the fudge part a little easier to work with. Looking forward to making this with neopolitan sandwich bars!!!

Corn Dog Muffins

Very quick and easy recipe... as well as affordable. I did not use cheese and they were still yummy... my 2 year old first picked out the hot dogs to eat and then polished the muffin off. This was a great recipe for kids - and for kids at heart. I will be making this again - next time I will put in cheese and maybe some corn too.

Easy Cheap and Yummy Casserole

Very good recipe, cannot wait to modify it with other ingredients. I used an 8x8 pan, slightly drained Homestyle Bush Beans, I used 6 cut up Nathan's hot dogs and Jiffy cornbread mix. I cooked it for about 30 minutes at 400 degrees - any longer in the oven and I would have burned the cornbread. My 2 year old went nuts, kept asking for more. I dipped my serving in ketchup and mustard - yummy! Fun and easy recipe!

Brownie Crackles

Very yummy! I really enjoyed making these! I did have to cook them longer than 10 minutes to get them to firm up appropriately (and use a tad more flour). However, I love the way they look and can't wait to modify the recipe by using different types of chocolate chips (PB, mint, etc). Can't wait to try them a la mode!

Tomato Cucumber Salad

This is my favorite salad. A friend made it for me and I went crazy over it! The only things I would change in this recipe is to add a 12 oz can(pitted) whole black olives - medium size. I keep them whole. Drain and rinse olives before adding to mix. I actually use the juice from 2 lemons and use about 1/2 cup or more of olive oil. For those who think the salad is bland... I'm guessing that you did not add enough salt & pepper - please try it again - you will surprise yourself! It is fresh tasting and everyone goes nuts over it every time I make it. I usually chill it 30 minutes so the juices can marinate the veggies. I cannot wait to make this again!

Simple Taco Soup

This recipe is absolutely delicious and tastes like you spent a whole day making it. I served it w/ Fritos on top. Since I make this a lot, I modify what type of beans I put in... black beans, great northern beans, etc. Of course, sour cream on top is divine!
