Oatmeal Whole Wheat Quick Bread
This recipe is very quick, easy, yummy, and a healthy alternative to white bread. I did have to add about a 1/4 cup of more flour, as 1 cup of flour left the dough very sticky. To ensure that the loaf cooks all the way through, flatten the dough a little once you place it on the baking sheet.

Best Ever Banana Bread
This is one of the best recipes that I have come across for banana bread; it makes a very moist and delicious loaf. I did make a couple of minor adjustments. I added a teaspoon of vanilla to the batter, and I also sprinkled the loaf with a cinnamon-sugar mixture. Before removing the bread, I let it sit in the pan for 5 min, and I then let it cool on a rack for 10 min. Once it had cooled for 10 min, I wrapped the loaf in tin foil to allow the cinnamon-sugar mixture to moisten, rather than stay powdery. If you do not have pecans on hand, walnuts make a good substitute. Also, I found that 2 bananas equaled a cup. This recipe can also be used to make muffins, which come out equally as delicious as the loaf.

Amazingly Easy Irish Soda Bread
This is a very easy and delicious recipe for soda bread. If you do not have buttermilk on hand, you can add 1 tbsp of vinegar (I prefer cider vinegar) to a liquid meausring cup, and then fill it with milk to the desired mark. I also recommend flattening the dough a little, as it will cook quicker. The first time that I cooked this bread, I did not flatten it, and I had to bake it quite a bit longer. This is definitely a keeper!
