Sean's Falafel and Cucumber Sauce
This was a long recipie to make... But worth the wait! the falafels came out well the ones that I coated in breadcrumbs, and some i dusted with flour held together better than the ones i did not. I added 1/2 stalk celery, and 1/8 cup of sweetpepper to the mix. I used geram masala as it has in both corriander and cumin. For the sauce i used an alternate version, where i added 1 tsp lemon juice I clove garlic some parsly and cilantro to the sauce. YUmmy this is my "midnight" snack lol

Split Pea Soup without Pork
This is a great simple recipe. I did a bit of tweeking. Sauted onions, sweet pepper, garlic, chives, thyme, and celery in some evoo before adding the chicken stock ans peas. I also added a 1/4 teaspoon of geram masala. My soup was ready in under and hour as HINT: I SOAKED THE PEAS IN WATER OVERNIGHT!(2 times as much water as peas, throwing off the original water when i was ready to cook) this will help with cooking times and cause the peas to reach the desired consistency faster/more easily

Barbadian Plain Cake
Really easy to make cake, well more pudding like in consistency but excellent none the less. I added a tea spoon of amaretto, some cimmamamon and nutmeg for flavor. I a also added some marachino cheries and currants that had been soaked in wine (for my Antiguan Black cake. Yummy!!!
