Challah I Slightly Modified

Challah I

1. I used a 6qt Kitchen Aid Mixer and followed the basic recipe, but added 10+ cups of flour to get proper dough consistency. I removed the dough from the mixer and turned it several times before setting aside to raise. 2. After the rise, I placed the dough back in the mixer for ~3 minutes adding additional ~1/2 C flour before removing from the mixer. I then turned it several times before dividing. Then followed the recipe as written to form the bread. 3. I preheated my convection oven to 370 degrees and after the egg wash and poppy seeds I baked the bread for 35 minutes – too dark for me! Next time I’ll check it each minute after 29 minutes and remove when proper color is achieved.
