Oh Wow.....about me?? Really? Ok.....as you can tell already....im a mommy. I work 10 hour days...5 days a week doing clerical office work at a large company. I'm very proud to say that I love where I live and have never moved far away. I love the outdoors and the change of seasons. I love music and really enjoy my family and friends. I love to cook...duh!! I also enjoy the arts. I enjoy antiques and history of places I visit. I furnish my home with a array of objects we have picked up over the years....and I don't have a specific style...other than what I consider cozy. I love to experience new ideas. I really don't watch much tv. I don't watch the news any more (too depressing) I'm better off without it! I love to camp out on the river....(we have a campsite on the river) I enjoy my pets (1 dog...2 kittys) Wow....there is alot about me. My attitude on life always depends on how much sleep I got the night before!!! (ha ha)

I love cooking on charcoal. I enjoy cooking hearty soups and making side dishes!

Homesteader Cornbread
This was so much better than the standard cornbread...it's a bit denser and thicker and did I mention much yummier. Throwing out all my other cornbread recipes. You cannot go wrong with this one.

Slow Cooker Mashed Potatoes
You really cannot go wrong with this! This is the perfect combination of flavors. I used the towel under the crock pot lid...it worked great keeping the extra moisture under control. I loved how warm these were. I'm really not sure how people have problems making these...it's common sense. You reserve a little bit of the water to use to get these to a creamy consistency while your mashing them. If you put too much of the reserved water in....well your going to have bad results I would imagine. Loved this recipe. This was complimented on over and over at thanksgiving...give this a try!

Spinach Lasagna II
I usually always make the recipe exactly as is. I did add 2 precooked chicken breast(cut up) to the spinach mixture and added a clove of garlic. I really enjoyed it as did my 2 year old....whom loves anything with tomato sauce. This was fairly easy and a change from things I usually make. I think that it is a good basic recipe and will be making again someday.
