Brown Jug Soup

Reviewed: Oct. 19, 2009
Wow! I made this soup for myself because my husband and kids do not typically like soup, and they ended up eating more than me. This is the best soup I have ever made. I cut the amount of water by 1/2 a cup, but kept everything else the same. We are particular about veggies, so i used 3 c cubed potatoes, 1/2 onion (maybe more) and 10oz brocolli. After adding the cheese, I added 1 1/2 lbs cooked shredded chicken. Served up in bread bowls, this is sooooo good.

Caramelized Baked Chicken

Reviewed: Oct. 13, 2009
I followed the recipe exactly, however i did boil the sauce before adding it to the chicken. I covered the chicken for the first 30 minutes, but next time i will not. Uncovered, the sauce thickened better. Even covered for half the baking time, the sauce stuck to the chicken very well. It was a big hit with my husband, so I will be making this often.

Cinnabutter

Reviewed: Oct. 13, 2009
This is like the butter they give you with bread at the Texas Roadhouse. Very good. My first time making it I over heated the butter and it seperated, leaving the consitancy less than desirable, going forward i will use a spreadable butter that doesnt have to be heated at all. Everyone loved this.

Hot Spiced Cider

Reviewed: Oct. 13, 2009
I made this cider in a crockpot. I doubled the amount of everything except the sugar and i thought it was perfect! I did not have cinnamon sticks so i used ground cinnamon in its place-guessed at the amount. I turned the crockpot on high and let it heat for approximately 3-3 1/2 hours. This will be a regular for my family this fall and winter.

The name says it all. I followed the advice of others and used brown sugar, but did not use vanilla extract. These are excellent!

Mexican Lasagna

Reviewed: Sep. 8, 2009
This was excellent and not messy at all like I thought it would be. I used flour tortillas instead of corn and layered it as follows: tortillas, mexican blend of cheese, crushed corn chips, meat mixture, 1/3 chopped onion, fresh diced tomato, salsa, cheese, tortillas, cheese. Amazingly my extremely picky kids tried it and both said they wanted to eat it. (I baked it for less than 15 minutes)

Tiny Chicken Turnovers

These were okay. I thought they were missing something though, as they were kinda bland.

Broccoli Chicken Roli

I was not impressed at all with the end result of this recipe. I followed the directions to a T. It smelled really good cooking and looked wonderful, but the taste was lacking. I do like the idea of using cresent rolls to make a ring, but next time i will try a different filling.

I followed the recipe except for the bouillon, i didnt have any on hand so i used chicken broth in place of the water/bouillon mixture. It was very good, and something I will be making again. *edit*I had to change my rating from 4 stars to 5 stars. It is excellent reheated the next day. We loved it!

I followed the recipe exactly and we were not able to finish what we had on our plates. It was not good at all. The Rosemary was all we could taste.

Kerri's Holiday Punch

Reviewed: Jul. 7, 2009
This punch is great! I was not able to add 3 liters of lemon-lime soda. I poured approximately 2 1/3 in and my bowl was full. It was wonderful without the rest. I did not add the red food coloring, but did everything else according to directions. This recipe serves 4 adults. Everyone agreed that you could not tell it had So. Co. in it.

Easy White Chicken Enchiladas

Reviewed: Jun. 22, 2009
Excellent and very filling. I cubed and then fried chicken breast in butter (seasoned chicken with Soul Seasoning). I used regular salsa, a pizza blend of cheese, and low fat sour cream because that is what i had on hand. Everything else was as directed. I only wish i would have added cooked rice to the bottom of the pan before adding the rolled enchiladas. My husband said that this is a new favorite.

Taco Pie

Reviewed: May 24, 2009
This is excellent! It was easy to make and very good. I do not know that it is worth the extra fat and calories that the crescent rolls add to it. They do not enhance the flavor at all. If I didnt care about calories this would be my new way to make Taco Pie, but I dont think I will make it this way again.

Slow Cooker Chicken and Dumplings

Reviewed: May 4, 2009
This is a good and easy recipe. I added 14oz of chicken broth on top of everything instead of water. Dinner time was a little late due to work which increased the lengh of time this cooked. The cook time caused this mixture to become too thick. I added 1/2 c milk in and stired until just mixed, and it made it nice and creamy again without changing the flavor. I was worried about adding the called for amount of onion, but it was not too much. Will make again.

Pioneer Cut Dumplings from the 1800's

Reviewed: May 4, 2009
Great recipe for Dumplings. I rolled the dough out thin and cut into small rectangles. I followed the advice of another reviewer and let them sit out for about 4-5 hours before cooking. They plumped up to the perfect size and were not gooy at all. (I used these to make Chicken and Dumplings in a slow cooker)

Never Fail Pie Crust II

Reviewed: May 4, 2009
Finally I made a good crust!!!! I followed the recipe exactly (except cut in half) I was needing a crust for a 9 1/2 in pan and this recipe halved was enough for two. Rolling the crust out thin is important. I didnt take time to roll it out evenly and after it baked it had areas that were really thick. I made a fudge (brownie) pie and this crust complemented it well.

Banana Pudding IV

This is FABULOUS!!! I made this following the recipe to a 'T' and it turned out wonderful. I put it in a large glass bowl and it was pretty. The next time I make it I will add less of the condensed milk, only because I dont think all of it is necessary.

Chicken and Corn Chili

This does not have the consitancy of chili. It has a good flavor. I served it over frito chips with shredded cheddar cheese on top. It is not a recipe that I will be making again any time soon, but was okay.

Fideo (Mexican Spaghetti)

Reviewed: Mar. 1, 2009
This is a good recipe. After cooking the chicken, I wipped the pan with a paper towel to removed any stuck on pieces of chicken, so they wouldnt burn when i browned the pasta. I browned the pasta in butter intead of oil for the flavor. I did not have tomatoes on hand so I used two cans of rotel undrained. Other than that, I followed the recipe exactly. It was a little spicy. I will leave out the salt and pepper next time. Also, I used cheddar cheese on top, but mexican cheese would have been even better. Easy to make and liked by all.
