About this Cook
My favorite things to cook
Hmmmm, I love to cook period - nothing like immediate gratification! If you're good, it tastes good, if you're bad at it, WATCH OUT! I enjoy making pasta dishes (so quick and easy), I love to make chicken, any kind of way, because I love the challenge of making sure it's fully cooked, yet moist and tender! I love baking cookies and cakes... I'm getting hungry...
My cooking triumphs
Moist chicken! :-)
My cooking tragedies
When I was 19, I attempted to make some kind of packaged rice dish for a boyfriend... I didn't cook it well enough or add enough water, and it was crunchy. He forced himself to eat it anyway. I was mortified.

Shepherd's Pie VI
Very quick and easy prep - that's because I opted to use frozen peas and carrots versus mashed carrots! Followed everyone's advice and used: 1 C brown gravy, 2 T ketchup, and 1/4 C Worsch. sauce. DELISH! Will definitely be making this again! Recipe as is? With all the doctoring up, the flavoring IMO was perfect and subtle, so I can only imagine that the original recipe would have needed something 'extra' for our household.

Quinoa and Black Beans
This was a hit. Easy to prepare, easy to make, easy to eat! No crazy ingredients necessary, and pretty affordable too! I followed the recipe exactly-ish: except I took everyone's advice and used one can of black beans instead of two. I will most definitely be making this one again!

'Out of Salad Dressing' Salad Dressing
Ease of recipe = FIVE stars! Taste of recipe = FOUR stars! I wish I could give this recipe a four and a half stars! Talk about life saver! Husband and I were making salads for dinner, only to find out we didn't have any dressing! DOH! This was easy, delicious, and satisfying! The lemon was great at cutting the richness that the mayo and parm added. Followed recipe to the letter EXCEPT used already grated parm from Costco. DELISH!
