About this Cook
Hello everyone! My name is Lindsey, I am 27 yrs old and I am a stay at home mom. I have been married for 6 yrs. I have two boys ages, almost 5 and 7. I also have two dogs who are like my children. Annie, a rescued american staffordshire terrier who is just the most gentle dog ever! And Diesel, an 96 lb boxer who really is just a big baby! I love to cook and try new things and I really enjoy entertaining large groups of people. I always like to challenge myself to see if I can get everything done at the same time. I had my kids pretty young and I would love to go to culinary school and open up my own restaurant someday! I definatly have high expectations and my kids come first so I would never want to take anything away from them so we'll see......
My favorite things to cook
I love to grill! I also love seafood of any kind! I probably could go on and on with my favorite things to cook. I would have to say though, lima beans are not my favorite! Along with liver. Other than that, I am not that picky. I don't have that much patients for baking. I really have to be in the mood.
My favorite family cooking traditions
I cannot really think of any traditions. I have always loved cooking with my mom in the kitchen and I try to pass that on to my boys.
My cooking triumphs
I am my biggest food critic! It is a really good feeling when somebody really enjoys the food you made so I guess that pretty triumphant!
My cooking tragedies
I forgot baking soda in banana bread one time and it was just horrible! I am sure I have had more, I just cannot think of them right now. I sure there will be some in the future also lol!

Supreme Scalloped Potatoes
Omg this is sooooo good! If I could eat this everyday I would! I didnt boil the potatoes like the recipe states. I sliced them and layered them with the cheese and the sauce. It also took around an hour and a half to bake. I also used lowfat sour cream. I'd give this 10 stars if I could!!!

Swiss Chicken Casserole II
This recipe just didnt do it for us. I thought it was very soupy and liquidy. I guess I expected it to be cheesy and gooey. It also was very bland.

Shredded Beef Enchiladas
We thought the sour cream/cheese sauce for this was kind of bland. The meat was excellent! I definatly will make the meat part of this recipe again in the future for tacos. Next time I will add some fresh garlic and maybe some green pepper to it while its simmering.
