I'm currently going to school to become a dietitian. I enjoy cooking and I try to make healthy versions of recipes.
My favorite things to cook
I like to make muffins and quick breads. I usually use applesauce instead of oil so they are a little healthier. Cookies are fun to make, but I don't like rolling out the dough to cut them into shapes.
My favorite family cooking traditions
I try to make tacos the way my mom used to and they come pretty close. Other than that, we don't have any cooking traditions.
My cooking triumphs
I made cinnamon rolls once and they were really good. I probably won't make them again though because the whole dough rolling was tedious.
My cooking tragedies
I've burnt cookies a few times, but they were still edible. I made an apple pie from scratch once and it never thickened up in the middle. It was really runny, but it still tasted good. Nothing I've ever made has been inedible at least, lol.

Enchilada Casserole III
This was awesome, but I made some changes. I used no fat black refried beans, and canned enchilada sauce. I added half an onion and half a green bell pepper both diced to the ground beef (extra lean) and then added a small can of diced green chiles. Also, I used 2 cups of low fat Mexican blend cheese. I baked it for 25 minutes covered and 5 minutes uncovered so the top turned out a little crispy. It was very tasty and my husband really enjoyed it too!

Garlic and Dill Salmon
This fish had a strong garlic taste, but it was good. I added a little lemon juice to the mixture. I didn't have fresh dill, so I used dill seed. My husband liked it too.

Simple Salisbury Steak
It was pretty tasty. I should've used more bread crumbs than the recipe said because the patties completely fell apart. I didn't use mushrooms since I didn't have any. The meat was good mixed up with some egg noodles.
