One Bowl Chocolate Cake III

Reviewed: Dec. 15, 2009
I tweaked this recipe just a bit and thought the result was sensational; probably better than any other cake I've made. I upped the cocoa to 1 cup and the vanilla to 1 Tbs. Made as cupcakes and added a tsp of mini choc chips to each cupcake. The real test of a good cake is if it tastes good without frosting. This one does! To add to the flavor perfection, it's all done in one bowl. What could be better?

Pumpkin Gingerbread

Reviewed: Dec. 8, 2009
I followed the recipe exactly, with the exception of using only 2 cups of sugar, and cooking at 325 for a bit longer. Very tasty gingerbread; definitely the best I've ever eaten. It is very flavorful and moist. Thanks!

Apple Crisp II

Reviewed: Nov. 21, 2009
I made this for my husband's annual thanksgiving lunch potluck. It was delicious! I did cut the water in half, cut the sugar in the apples in half and doubled the crust. Next time I would use 1 1/2 times the crust instead of 2 times, as I felt the crust was a bit too thick. Overall, I felt it was better than apple pie!

Easy Granola Bars

Reviewed: Oct. 7, 2009
Very good and easy. I have made them several times, and enjoyed them every time. The only reason I didn't give them 5 stars is because of the strong sweetened condensed milk taste that I wish I could get rid of. Any substitution for the SCM I've tried hasn't yielded favorable results.

A-Number-1 Banana Cake

I added some chopped pecans and a chocolate ganache to the top. The cake is moist and wonderful plain or with the nuts and chocolate.

Very Chocolate Ice Cream

Reviewed: Aug. 18, 2009
I make ice cream at least once a week during the summer and this is the best ice cream recipe I have ever tasted. As written, it has a smooth, thick and creamy (yet not greasy) texture and the perfect chocolate flavor. I altered the recipe only slightly; I used special dark cocoa powder, and added chopped almonds. Also, I did not refrigerate the mixture for two hours, only let it cool on the stove to room temp before putting in my ice cream machine and I had no problem with it freezing. PERFECT!

Steff's Shepherd Pie

Reviewed: Aug. 6, 2009
Good, simple to prepare (if you have leftover mashed potatoes) and pretty kid-friendly. I cooked the onions with the ground beef so they wouldn't be crunchy, and added salt and pepper. The dish turned out okay, just a bit bland.

Very good frozen yogurt recipe. It tastes a bit like frozen Yoplait, only a little more complex. Will make regularly.

Chocolate Velvet Ice Cream

Reviewed: Jun. 29, 2009
I loved the airy, marshmallowy texture of this quick ice cream. I felt better about using a pasteurized egg product, as another reviewer suggested, rather than use raw eggs. It wasn't quite chocolaty enough for me! I will add more cocoa next time. My husband loved it as is though.

Brunch Strata

Reviewed: Jun. 23, 2009
I prepared this exactly as written. I thought it had a good flavor, but it doesn't really taste like eggs. My husband didn't like it, but it was probably the mushroom flavor. If you're looking for a dish that tastes like eggs, try something else.

Hawaiian Chicken Kabobs

Reviewed: Jun. 17, 2009
I'd give this 4&1/2 stars if I could. The chicken turned out very tender and juicy, but a little too sweet. I didn't marinate the pineapple with the chicken, but I did substitute 1 Tbs vinegar and 1 Tbs pineapple juice for the sherry in the marinade. I also added extra veggies on the kabobs. I think it would taste better with less brown sugar, so I'll try that next time.

Light Oat Bread

Reliable, consistent recipe. I used 2 cups bread flour and one cup white whole wheat flour. As stated, the rolled oats were absorbed into the loaf. Be sure to use light setting on your bread machine. May use again.

Hamburger Vegetable Soup

Reviewed: Apr. 30, 2009
Very delicious and healthy soup! I only changed a few things. My family likes chunky soups, so I only added 2 cups of water. Also, I added more veggies than the recipe calls for, about 5 cups frozen and double the celery. Lastly, I added a can of drained chili beans. My three year old had seconds!

Slow Cooker Chicken Taco Soup

Reviewed: Mar. 23, 2009
Very, very tasty and easy! I used frozen chicken breasts and it turned out perfectly. I added all ingredients without draining and there was plenty of liquid, so I omitted the beer. I also sprinkled in some garlic powder and cumin. Served with a salad, cheese and chips.

PHILLY Chocolate Turtle Cheesecake

Reviewed: Dec. 1, 2008
I prepared this exactly as written. It was very easy to prepare and it came out decadent and delicious! I especially love the caramel pecan crust. I'd never had anything like that before. The cheesecake is definitely a semi-sweet flavor. For those who would prefer more of a milk chocolate flavor, try using fewer bakers chocolate squares, or melt a milk chocolate to mix in the cheesecake. I thought that many would be too much, but it tastes great to me and wasn't at all grainy.

Cowboy Cookie Mix in a Jar

The batter is very dry and crumbly when prepared as directed. Nonetheless, I resisted my impulse to add a little moisture, and the cookies turned out fine. A bit dense and hearty, but tasted good.
