Refried Beans Without the Refry

These were really great! This was the first time that I have made beans from scratch and it was super easy. Love how I can mash to the consistency that I like. I didn't have any fresh jalapenos so I added a half of a can of green chiles. We had a lot of leftovers because only two of us but I have froze the other half and can't wait to defrost.

Famous Pork Chops

These were pretty darn good and I have made them twice already. I did add some garlic salt to the crackers and that was perfect. I thought that the recipe called for way too much butter and I only added half and will probably cut that down again next time. Yes, I think that they can get a little soggy, so be sure to broil them for the last few min to crisp them up.

Philly Steak Sandwich

Very good, I sliced the meat as thin as I could and doubled the seasonings because I had more meat than the recipe called for and put most of it on the meat but also the left over on the peppers and onions. I think that we will definitely be making this again.

Ruth's Grandma's Pie Crust

This was really good. My first time making crust and it was very easy. I used a potato masher to cut it the dough because I don't own a pastry blender and it worked great. The dough made 4 crusts and was very flaky and savory. I used it to make a chicken pot pie and I am not usually a crust person but I really liked eating this one. When I made the pot pie I baked the bottom shell for 10 min in the oven first before placing the filling. Hubby loved this too. Thanks!

Lemon Blueberry Drop Scones

These were very good and I will definitely make these again. I didn't have any yogurt so I subbed low fat sour cream and they turned out great. I did feel like the dough was kinda hard to work with and the fresh blueberries didn't get into the dough enough, but maybe that was the sour cream. I didn't like the frosting however. I did make a vanilla glaze that was better for our liking.

Caramel Apple Pork Chops

The apples were great! Pork chops not so much. I will probably try again but will bake in the oven. Also I needed to add cornstarch to the sauce because it was pretty watery.

Banana Muffins II

Super easy to make and they turned out great. My oven cooks hot so I used 325 and 20 min to cook. I also wanted to use up the bananas that I had so I actually put in 4 large banana. Also sprinkled cinnamon sugar on top.

Just ok, if I make it again I will add something to it, although I am not sure what. My Husband felt the same way but my Mom had the left overs and loved them. She even called me to say that she was eating it again the third day.

Chewy Red Raspberry Squares

Pretty darn good, although mine were slightly overcooked and hard on the edges. The center pieces were soft and chewy. Just make sure that you watch the cook time. Will definitely make again and probably try different preserve flavors. Oh and I subbed vanilla for the almond extract, because I didn't have any.

Dragon Dippers

These were good, not my most favorite, and not sure if I'll make them again. I was very weary of them as I was making them, but had really wanted to try them. I had made a chicken tortilla soup and they went well together. My husband and 2 year old didn't like them at all.

Chicken Tortilla Soup I

This was really good. I did make some changes out of necessity. I didn't have any black beans so I used some chile beans undrained. Out of corn so I used a small can of mexicorn. I also added an extra can of broth and added a can of diced tomatoes. Because of the spiciness of the chile beans I reduced the amount of chile powder to about a teaspoon.

Slow Cooker Turkey Breast

Gave this 4 stars because it was very moist. The flavor however was not as good as a roasted turkey breast. I sent my husband to the store to buy the turkey breast and he said that they only had bone in 3-3.5 lb turkey breasts so he bought two of them. Well, since I had two 3 lb turkey breasts I decided to do a taste test. I used this recipe for one at 1 hour on high then 1.5 hours on low. The other I baked with salt, pepper, garlic, and poultry seasoning. The one that I baked was far more flavorful but a little on the dry side. The one that I used for the recipe here was very moist but the onion soup was not something that we liked on the turkey. If I make this again I will do something other than the onion soup.

Tri-Tip Rub

Way too peppery!!! 2 Tablespoons is way too much. I doubted it as I read it but I really wanted to follow the recipe. I put it on the grill and it was so "cakey" with the rub that I decided to scrape some of it off. I am glad that I did. It was still pretty peppery even after all that. Don't think that I will be making this again.

It must have either been me or my baking powder because mine sank in the middle and browned too much on the outside. I will probably try again and reduce the temp and buy some new baking powder.

Sugar Cookie Frosting

This was my first attempt at making frosting and it was so easy and good. I was a little scared from the look of the sugar and shortening but once I put in the milk and vanilla it was right on. I divided the frosting up into three bowls and added food coloring. This was enough for all the cookies that I made, perfect amount. I used this on the best rolled sugar cookie recipe from this site and they were a hit. Thanks!
