About this Cook
I travel with my husband on his construction jobs since we married in Feb 2008. We travel in a 30 ft camper and I'm now seeing parts of the US that I have never seen before!! Hopefully, over the next few years, I'll get to visit most of the USA!! And.....learn to cook with the recipes on this site.....
My favorite things to cook
Anything easy !! I have always been an "on the run" cook, due to being a full time working single mother. I'm really just learning how to cook more elaborate meals. I have always enjoyed creating casseroles and my daughter loves my homemade potato soup. She swears mine is better than any restaurant that she has sampled so far. Of course, she could be biased.....

Uglies
I made these for hubby & we both loved them!! Had a bit of trouble getting the biscuits to stay in the muffin pan as opposed to trying to escape by attaching to my fingers, but I succeeded. These were worth the struggle!! Delicious!!!

Easy Fruit Cobbler
Made this with blueberries for my hubby. I had never made cobbler before, but I'm sure I will be making it again. Hubby said it was one of the best cobblers he had ever had. The best part is that it was an easy, simple recipe. I will definitely make this one again, and will make it with different fruits!!

Tried 'n' True Peanut Butter Cookies
These were some of the best PB cookies I have ever made. However, be warned.....I cut the amounts in half and still had over 150 cookies. Maybe I just make mine smaller, but I was overrun with cookies!! Also, I did add a bag of peanut butter chips to the batter, which made these even more delicious. Super yummy recipe!!!
