I used some leftover (already cooked) roast for this recipe. I also used a dry gravy mix for cream gravy (normally used for chicken fried steak or biscuits). Since I did not simmer the meat but 15 mins I cut the water down when I added the gravy mix to just over 1/4 cup (there was still alot of liquid in the pan). I also omitted the salt and still found the recipe a tad bit too salty for us. It was tasty though. Thanks for the inspiration and helping me to use up some leftovers. :)

Beef Pot Roast

I gave this an average rating because it might be partly my fault that I did not like the meat. The meat was tough but I used a bottom round roast which is generally leaner than a chuck roast. I did add the Lipton onion soup mix and 1 cup of water and also added carrots and potatoes to the roast pan. The veggies were excellent tasting. I enjoyed the flavor of the bay leaves and onions on the veggies. I also thickened the juice in the pan with 1 tbs of corn starch for a nice gravy.

Army SOS Creamed Ground Beef

This was just okay. I had sauteed onions, garlic and mushrooms and added to my meat mixture but still found it kind of bland tasting. I also added more Worcestershire sauce than it called for.

Enchilada Casserole III

My 12 year old son made this dish for his cooking project at school. He had no problem making the dish AND it came out splendid! He served it with a chicken/tomato bouillon rice, a little lettuce salad on our plates and had salsa and sour cream to put on the casserole. The whole family loved it. Oh & he got an "A" on his project! I will make this again, myself.

Best Ever Meatloaf with Brown Gravy

I guess my rating is unfair because I altered the recipe...I didn't realize that I was out of chili sauce. I did substitute chili sauce for BBQ sauce as that is all I had (never thought about putting BBQ sauce in my meatloaf). The meatloaf was quite delicious. Although the gravy really didn't go with it. I prefer my own gravy, regardless. I served the meatloaf with cheesy scalloped potatoes and fresh green beans. Went well together. And I look forward to trying your version next time! Thanks!

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Excellent cake! Mine was very moist and just the perfect chocolate flavor. Will make again as I don't like to use boxed mixes and this was quite easy.

Salsa Pasta Salad

I was looking for a low-calorie pasta salad. This was the lowest I found and it sounded different. I was hesitant about only using 2 cups of dry pasta but it turned out to be plenty. I did add about 1/2 cup extra fresh cilantro to the salad. After letting it chill/marinade in the fridge for a few hours I've tasted it and think I will also add a finely diced jalapeno for some spice. It tastes really good now but I think I would enjoy the flavor of a jalapeno. Very good recipe.

Seafood Pasta Salad

Coming back after putting in fridge to chill I found this rather dry. I made a whole new batch of dressing and had to add it. I did however use low-fat mayo and the dressing tastes just fine. Guess I didn't save too many calories by adding a whole new batch of dressing. Oh well. My family liked it.

Beef in Bay Leaf Gravy

Proper English Cottage Pie

I REALLY enjoyed this dish. My kids were not sure whether they liked it or not. They pretty much ate all they took but I think the cinnamon was what made them unsure. My DH said it was "different" and ate a heaping helping. Thank you for spicing up our life! lol

Black Bean Enchiladas

My whole family loved this! My DH usually insists on meat with a meal and even he enjoyed these with no complaints! I did make my beans from scratch and had to add salt and I also added a little cumin to the bean mixture. Very good! I served this with Spanish rice. A new way to enjoy black beans. Thanks!

Creamy Smoked Salmon Pasta

What to do with leftover smoked salmon? This was absolutely fabulous! I even had the ingredients in my pantry! I did substitute the garlic powder for fresh garlic, canned mushrooms for fresh mushrooms and the Romano for Parmesan. I did add a little salt and pepper to the sauce. I served over egg noodles and my family thought it was great! Who'da thought to put smoked salmon in a cream sauce? Thanks for the recipe! Can't wait til we smoke another salmon!
