Potato and Cauliflower Casserole

This was okay. Probably not make it again. My swiss was rather mild. Maybe if my cheese had a stronger flavor I might have enjoyed it more.

Garlic Chicken Fried Chicken

The boneless chicken breasts were superb. The coating was a perfect combo of bread crumbs,flour & seasonings and this coating/breading didn't soak up the grease when you fried it. I had some bone-in thighs that I also cooked this way, I found that they were not as flavorful as the flattened out breasts (flavor didn't penetrate the meat).I will try this coating the next time I make chicken fried steak. Good recipe...thanks.

Cherry Cobbler I

Thoroughly enjoyed. With all of that sugar, I thought it would be icky sweet. It wasn't. Good flavor, perfect consistency. I'm going to try using fresh blueberries with this recipe. That sounds good too. It's a definite keeper. Thanks.

Burmese Chicken Curry (Gaeng Gai Bama)

I've made this recipe twice. The first time I didn't have the curry paste so after looking at the ingredients in curry paste on-line, I subbed it for various powders/spices that I had on hand (chili, onion, garlic, paprika, cumin, tumeric, coriander & lime rind). The dish was delicious but not spicy. This time, I used the curry paste and followed the recipe except adding the cilantro (a must! it SO goes with these flavors) and the shallots to the mixture right before serving. Excellent dish both times!

Ground Beef Mexican Style

To me, it was much like homemade hamburger helper. I did add chili powder, cumin and salt to the ground beef and some fresh cilantro when I added the pasta. My family enjoyed it and it was a fast weeknight meal. Thanks!

Outrageous Chocolate Chip Cookies

I added 1/2 c. each of grated coconut and chopped pecans. I made smaller cookies (dropped by rounded teaspoon)and baked for about 12 minutes. Delicious.

Cream of Celery Soup

Am thoroughly enjoying this soup. Nice and creamy. I used cold milk, not hot to mix with the flour. I added some Velveeta cheese to the soup once it was bubbling again and I did not strain out the veggies. Ummmm...delicious.

Slow-Cooker Chicken Tortilla Soup

I made mine on the stove top and sauteed the onion, garlic and a chopped serrano before adding the other ingredients. I also used 2 lbs of chicken and used chicken broth (homemade) in place of water and canned broth. Nice and thick (with the added chicken) and a delicious flavor.

Jamaican Spinach Soup

Excellent flavor. Trying to use up my potatoes and spinach, I did add more than called for and I also didn't puree the soup, I just used a potato masher and mashed. It was a thick and chunky consistency and quite tasty. Will definitely make again.

Baked Beans III

After reading the reviews, I only used 2 Tbsp of brown sugar. I'm glad that I did. They were plenty sweet, but not overwhelmingly so. I also chopped an onion & sauteed it with the bacon and added a dollop of prepared yellow mustard to the beans before baking. Oh & I used Bush's Baked Beans in the can to start with.

Sock It to Me Cake IV

This is very much like a coffee cake. I doubled the "streusel" mixture and layered it in 2 different layers. I thought that it might be too much cinnamon but it was fine. I used a coconut cake mix (its what I had).

Ten Minute Enchilada Sauce

Quick, easy, all ingredients that I usually have on hand and most importantly...absolutely delicious! The only thing I did differently was use the broth from my chicken in place of the water that was called for. This recipe is definitely a keeper! Much better than canned enchilada sauce. Thanks.

Chicken Enchiladas II

I was expecting a flavor similar to Enchilada Suiza. Luckily, I tasted the sauce before I mixed my chicken with it and it tasted like plain old canned cream of mushroom soup.I am from Southern Calif and my husband is from South Texas and this is not a flavor we like for our enchiladas. Sorry. Looks like I will just make my standard green sauce for chicken enchiladas. Oh well. Thanks anyway.

Pan Seared Red Snapper

The sauce tasted great...to me...however...I did not like the sauce WITH the fish. I used red snapper. My husband didn't even like the sauce (first time in 15 years) he dumped his plate of food in the trash.

Chicken Enchilada Soup III

Excellent and it was so easy to prepare. I used all broth, no water (only because I thought my broth not flavorful enough). I will definitely try it again and am curious how it would taste using a green enchilada sauce,omitting the chili powder and adding fresh cilantro. Oh & hubby said "oooh, doesn't sound good" when I told him about it and was quite surprised to find out that he really liked the soup! "tastes like an enchilada, ummmm, this is good!" Thanks for the recipe (I love it when he's wrong! lol)!

Cream of Broccoli Soup I

although I did make changes I am rating this 5 stars. I omitted the ckn bouillon and used ckn broth for the water instead. I also sauteed a minced garlic clove in with my onion/celery. I pureed/chopped ALL of the cooked broccoli in my food processor before adding it back into the soup. I added the cheese to the soup after it was thickened with the milk. I did hold out 1/3 c. of the milk because I wanted to make sure it would be thick enough. I added just short of a TBSP of cornstarch to that saved milk and stirred it into the soup for added thickness. I have never added nutmeg to my broccoli soup and I think this addition is quite a pleasant surprise.

Hot Bean Dip

Next time I make this recipe I will substitute the parsley for cilantro. I think that would improve the flavor. I reheated some of this leftover "dip" this morning and used it as a filling for a burrito. No one knew that it was last nights "dip". lol

Sunday Dinner Rolls

I threw the ingredients into my bread machine. Rolled out as instructed. Cut with a pizza cutter. Very easy recipe when using a bread machine for the dough. Will definitely make again. - I made these a 2nd time planning on using the dough for pigs in a blanket. I had leftover dough and made large oval shaped rolls out of it. My husband used the rolls to make pannini's (flattened down and grilled bread). Came out nice and crisp. Very versatile recipe.

Deviled Eggs II

Since some other reviews I read said the yolk filling tended to be a bit on the dry side, I increased the vinegar to 1 1/2 tsp. I also love using flavored vinegars and used a garlic flavored red wine vinegar. Absolutely delicious.
