Annie's Turkey Salad

I put the turkey in my food processor. I like it ground with a few chunks in it. I couldn't find a mayo/mustard sauce at the store so I had to adlib. I used a mayo/dijon mustard blend (90% mayo 10% dijon) that I made myself. This was a simple and delicious way to use up leftover turkey. I agree with other reviews...this recipes makes ALOT!

Burrito Pie

I had to work late one night and my 14 year old son ended up preparing this dish. He used corn tortillas (in error) but it still came out pretty good. This was easy enough for him to prepare and my family enjoyed it. Thanks for the recipe.

Baked Potato Salad I

I used 1/2 mayo & 1/2 sour cream and had to double the amount in the recipe for that amount of potatoes. I felt it was too dry. My boys won't eat potato salad and this was a good alternative. Served it hot tonight so I don't know how it tastes cold but I can't imagine it NOT tasting good cold because it sure was delicious hot! Thanks for the submission!

Ranch Beans

My husband does not like "sweet" beans. He likes Ranch style with his BBQ. This recipe worked for me. I've made it twice. 1st time as is and 2nd time (today) I used white beans instead of pintos and also took the edge off of the heat from the red pepper flakes with 3 Tbs of BBQ sauce. I really like this recipe as is but wanted to experiment with the flavors. Great recipe. Thanks for submitting it.

G's Flank Steak Marinade

Used a beef skirt steak. Marinated for 9 hours. Grilled on my George Foreman grill. Excellent flavor and very tender. I didn't find it too salty as some other reviews stated. Thought it might have a strong Asian flavor since it had soy and ginger in the marinade. Not a strong flavor at all but would be good with Jasmine rice. Tonight we sliced it up and served on toasted rolls (like Philly steak sandwiches). Thanks for the recipe. I will definitely use again.

Berry Crumb Bars

I did have to alter this recipe. I had no shortening so I used stick margarine. I only had 1 cup of fresh raspberries so I also used 1 c of fresh blueberries and 2 cups of frozen cherries (thawed) to make up the difference. Not one to enjoy overly sweet treats. This was perfect. My husband preferred it warm with whipped cream on top and I like it better at room temp with a glass of milk. Either way an excellent recipe. I will definitely be making this again and again. Thanks for the recipe!

Sweet Corn Tomalito

Pretty darned good! I microwaved the 7 minutes at 30% power, then 4 minutes at 100% power and it came out perfect. You don't find this too often here in Florida but in California and Texas it was common to get a dollop of this on the side of a Mexican plate. Kudos to the previous reviewer for the microwave directions. Never would have thought of that.

Todd's Famous Blueberry Pancakes

After reading the reviews...I tripled the recipe as we like leftovers for the boys to heat up before school and I am feeding three hungry men/teenagers to begin with. I did add 1 c. more milk and I also increased the sugar to Tbs. instead of tsp. and added 1 Tbs. vanilla. Even though I thinned the batter and didn't quite wait the full hour, pancakes fluffed up nicely.

Giblet Gravy II

The secret to a good tasting gravy is two things. #1 - lightly browning your roux and #2 - the flavor of your pan drippings. For more flavor, I did mix in more pan drippings with my broth. Very good.

It just seemed that it was going to be too dry for my likings so I added a little flour to my meat/veggie mixture (to thicken) and then added a can of beef broth, making a gravy/sauce before adding the tomatoes, beans and a can of mushrooms. Also added some mozzarella to the sauce and then seasoned to taste w/salt & pepper. I did top w/parmesan & baked as directed. :) Sorry. Not really a review of the original recipe but thanks for the idea for a quick after work meal for my family.

World's Best Lasagna

Absolutely delicious. The only change I will make the next time is that I don't eat so much! Especially loved the sauce (and I'm picky about red sauces). I will be making the sauce alone and freezing it for future use.

Watermelon Fruit Bowl

I used fresh pineapple instead of canned. I think next time I would also use fresh clementines instead of the canned mandarin oranges and leave off the "sauce" all together. The "sauce" made it have a lemony taste. I really didn't care for the slight lemony flavor of the sauce on the fruit.

Kiki's Borracho (Drunken) Beans

I've made this twice and I have made 2 changes to suit my tastes. I used 2 fresh jalapenos, seeded and chopped and I didn't care for the flavor of the dark beer last time so this time I used a Corona. Served with smoked beef brisket, oven fried red potatoes, rolls & fruit salad. A Labor Day feast. Delicious!

Egg Salad Sandwiches

For my tastes, I give the recipe a 3* rating as is. I like to taste the egg in egg salad. I ended up adding 4 more eggs and adjusting the salt & pepper to taste. I creamed/smashed the egg yolks into the mayo mixture til smooth, then added the chopped egg white. Next time I will probably just reduce the mayo/spice mixture. The combination of flavors is a nice.

Grandmother's Buttermilk Cornbread

The batter is more runny compared to my usual corn bread. It came out very moist and not too sweet. I cooked the last 8 minutes on speed bake and still could have cooked it another 5 mins. Delious corn bread.

Charleston Breakfast Casserole

I give it a 3 but my family gave it a 4. I made this last night and just popped it in the oven this morning. Cooking time was about 10 mins off (longer). I think it wasn't "eggy" enough for me. My son suggested that I try it with sausage the next time.

Smothered Green Beans

I did make 2 substitutions. I used diced ham instead of bacon and 1/2 tsp of garlic powder instead of minced garlic. The "gravy" (little that there was) at the bottom of the pan was absolutely delicious drizzled over mashed potatoes. I have made this with bacon too, so the 5* rating goes either way.

Fresh Cherry Crisp

I was looking for a "crisp" topping for my mixed fruit (peaches, apples & berries). I used all margarine instead of the shortening. I thought this was the perfect amount of topping for 5 cups of fruit in a 9 X 13" pan. My family thoroughly enjoyed this!
