Big Soft Ginger Cookies
I made these exactly as written with the exception that I used butter, not margarine (just didn't have any). These were just lovely. I pressed them down pretty flat as suggested by other reviews, and they were slightly crispy on the edges, soft and chewy in the middle. A perfect light flavor. My kids DEVOURED these and I sent a few dozen into work with my hubby. Those were gone in minutes. A truly GREAT recipe.

Peppy's Pita Bread
Perfect, don't change a thing! Mine came out all sorts of wonky shaped because I can't roll a circle, and they still puffed up quite nicely (about 8 out of 10). I'm very impressed with myself!! Good bread taste too, perfect background for fillings!

Oatmeal Peanut Butter Cookies
Excellent cookie!!! Since I don't use shortening or margarine, I used one stick of butter and 1/4 cup of olive oil plus 1/4 cup of applesauce. I also did not have quick oats, and used regular rolled oats with no problem. From previous suggestions, I upped the oats to 1.5 cups as well, plus added in some chocolate chips. My kids went crazy for these cookies. Next time I'm adding flax.
