Eggplant Parmesan II
Very good!!!! I made the mistake of cutting the eggplant to thin and then baking for 10 minutes which was too long. The slices were too crispy and took away from the flavor of the eggplant. I salted the slices with sea salt before dipping into the egg and bread crumbs. I didn't have italian bread crumbs so mixed in some Italian seasoning in to regular bread crumbs. Will make this again!
