Black-Eyed Pea Gumbo
I tried this and it took Black-Eyed Peas to a whole new dimension! Great for giving those Peas a "makeover" and bring back the romance with this vegetable.

Eggplant Parmesan I
It was a great experience creating this dish for the first time. The only thing I did different was to dip in egg and coat with Italian bread crumbs then layered in dish. Great!
