Stained Glass Window Cookies

These were really cool! My sister and I had fun making them. We added more sugar & flour both - more flour because we used a lot of food colouring. We also used less milk (about 3 tbsp total). Used jolly ranchers and found that the holes couldn't be too small or else it doesn't work!!! Make sure they're about an inch in diameter.

Apple Pie by Grandma Ople

Wonderful!!! My mom is THE pickiest person - (it is so hard to impress her even though she herself doesn't bake or cook!!) - and she loved it! :) That's how I know it's a great recipe. I brushed the bottom crust with milk before putting the apples in (used 8 smaller sized red apples) and poured most of the mixture on top, saving about 1/3 for going over the top crust. I also used margarine instead of butter.

Quick and Easy Chicken and Rice

Cool. Used leftover chicken fried rice plus a can of maple leaf canned chicken - my fam never even notices the difference. Also used broccoli instead of mushrooms.

Caramelized Baked Chicken

I am SOO excited - I'm in shock by how much my dad enjoyed this!!! He's always easy to please but he went on and on and on about how amazing this was! Here's what I did: mixed 3/4 cup ketchup, 3/4 cup honey, 1/2 cup soy sauce, and some minced garlic; cooked the mixture on the stove top until boiling and reduced heat. Put carrots and 3 bone in skinless chicken breasts in my crock pot, poured the sauce over top, let cook on high for 1 hr, then on low for another 3.5-4 hrs, then on high for the last hour and added broccoli and cauliflower during the last hour. Served with chicken fried rice!

my mom said 'this is the best banana muffin i've ever tasted' and she is hard to please ;) used canola oil instead of butter and didn't even do the crumb topping!...update: made with the crumb topping and they were even more well-received...made 9 massive muffins, baked 18 min

Banana Cream Pie III

Update: quite mushy but delicious! Haven't eaten it yet but I used a pre-made graham cracker crust, brushed it with an egg white and baked it for 5 min at 375 degrees, once it cooled, filled it with sliced bananas dipped in lemon juice, half a banana remained so I mashed it an added it in with the pudding mixture. For the pudding, I only needed ONE box of jello vanilla pudding and 1 cup of milk, and I used 1 package of dream whip. Used half the package of dream whip in the pudding mix and will top the pie with the other half. It seems thick and won't be runny :)

Fresh Pear Cake

I used applesauce instead of butter/oil and 2 eggs instead of egg whites. It looked great but my mom didn't care for it. My dad said it was pretty good. Nonetheless, not great reviews but it looks nice :)

Bake Sale Lemon Bars

I really liked this recipe! I did make some changes though. If I hadn't done it in a 9 x 9 square pan, I think they would have been much too thin. I made the crust, baked for 15 minutes only, I upped the filling flour to 4 tbsp and the lemon juice to 1/3 cup, added 3 drops of pink food colouring (they looked really cute); and then baked for about 20 more minutes. My co-workers really enjoyed them and a few asked for the recipe :)

Enchiladas

So awesome. Added yellow, red & orange diced pepper & onion to the meat mixture (had no taco seasoning so I threw in a bunch of random spices); instead of yogurt/sour cream I use HELLUVA DIP - it adds a great flavour. Mixed that with the chicken soup and cheese. Filled 5 9'' flour tortillas, fastened the tortillas with toothpicks (great tip so they stay together), sprayed my glass pan with pam prior to putting the enchiladas in and voila!

Banana Muffins II

This made 12 normal sized muffins and 8 mini muffins for me. They baked perfectly, no one has tried them yet though. I was tempted to add vanilla or cinnamon but my dad forced me to follow a recipe without modifying for once lol.

Taco Pie

I made this for my mom and dad early on Wednesday, refrigerated it overnight before baking, popped it in the oven while they were at work on Thurs for about 30 min at 350, and they both loved it. I was upstairs studying and my mom called down "Jes! Come here for a minute" and she asked me if I'd make it for her next week to take in to her work potluck! They were quite impressed. I did make a few slight alterations. I baked the pillsbury pastry for 10 min at 350. Then, I browned the beef with green, red, & yellow peppers + diced onion, drained it, added taco seasoning and two big scoops of helluva dip, mixed that all together, tossed it into the 9 x 9 pan with the pastry on the bottom, put a very thin layer of helluva dip on top, crushed nacho chips and covered, put on some cheese and voila. They're big helluva dip fans so that could be why they enjoyed it so much! lol

Baked Beans, Texas Ranger

I have made this recipe a couple of times and although my family members aren't big on beans, they enjoyed them. I used 2 cans of Heinz maple beans and 5 honey garlic sausage links this past time. I never use vinegar and I remove the lid of my dutch oven with 30 min left of cooking time. I also cut the chili powder to 1 tbs. Thanks :)

Cheese Onion Garlic Bread

I was only making two big pieces - I used 1/2 cup mozza cheddar cheese, 2 T parm (the Kraft kind), 1/4 cup Mayo, about a teaspoon of minced garlic, mixed it all together and put it on the bread which I brushed with oil. Great :)

Angel Chicken Pasta

It turned out great with some changes. I was making it just for my 2 parents and here are the ingredients I used: 2 skinless, boneless chicken breast 1/4 cup butter 20 g package dry Italian-style salad dressing mix just under 1/2 cup ginger ale + a bit of water 1 can cream of mushroom soup 4 ounces fat free herb & garlic cream cheese 1/2 pound penne pasta They loved it and it was easy. I cut the chicken in strips before putting it in a baking dish, added broccoli and chopped red peppers to the sauce while in the pot, then poured it all over, covered with tin foil and baked for 55 minutes. Oh and before putting the chicken in the baking dish, I sprinked down garlic & italian seasoning. Put some pepper on the breasts too. Thanks for a fab recipe!!

Bacon Cheese Muffins

Update #2: tried this again using 2 cups flour, 4 cups shredded cheese, 1 egg and a big of eggbeaters, 3/4 cup milk + 1/4 cup veg oil, and 3 massive sausage links & it worked out great!! Update: I can't believe this recipe hasn't been more popular - I made a batch and gave some to the neighbours and they went nuts. Everyone thinks I'm an incredible chef now haha. Please take some of my changes into consideration, especially if you like cheese! The second time I made this, I made it the same as the below listed changes except instead of onion powder I used 1/2 cup diced onion and 6 slices of bacon rather than 4. My family loves them! -- I wanted to just do half the recipe but it ended up making 10 muffins for me. I used 1 cup flour, 2 cups shredded Cheddar cheese (my parents are cheese lovers), 4 bacon strips and threw in a bit of real bacon bits, 1 egg, 1/2 cup milk & the 2 tablespoons veg oil, 2 teaspoons baking powder, 1 tablespoon sugar, some salt, some garlic powder, some paprika, some onion powder; only baked for 13-14 min. Thanks!!

Hot Fudge Ice Cream Bar Dessert

Here's what I did: crunched up fudgeo cookies (2 layers from the bag - put them in a ziplock bag and mashed them all up), made a layer using them in a 9 x 9 pan, but that pan in the freezer and took my homemade ice cream out of the freezer at that time so it would soften a little bit, then I only had 1/2 cup of chocolate sauce so I added half a leftover milk chocolate bunny rabbit from Easter and melted it in the microwave for 1 minute -stirred all that, stirred in 1/2 cup crunchy peanut butter. Left everything for about 20 min so the choc/pb mixture had time to cool a bit. Then I took my pan out of the freezer, put on a layer of ice cream, layered the pb/choc mixture on top of the ice cream, topped with about 2 cups of dream whip (just like cool whip basically), added on a few more crunched up fudgeos to the top and now it's in the freezer. It looks delicious and I can't wait to eat it. Just thought I'd share how I compensated for a lack of ingredients! Update: it ended up being delicious!
