About this Cook
I live in central Arkansas. I have a little dog who likes to watch me cook, and I love to read, watch movies, and travel. I go to school part time and work at a major international corporate aviation training company. I am one of only 3 women in my office with 9 men, and we have up to 35 male clients here from out of town for up to 3 weeks at a time. I use them as my guinea pigs! I have only been cooking & baking as a hobby for the past year or so. Luckily my wonderful boyfriend is willing to try anything I make.
My favorite things to cook
Desserts! I recently discovered that I love to make Bundt cakes, and I'm always on a quest for the perfect cookie. I like to make dinner items as well, mainly pasta dishes. I would love to be able to learn more healthy ways to get food on the table.
My favorite family cooking traditions
I'm from the south, and my grandmother is the epitome of a southern grandma. One day I hope to be able to prepare meals like she does....fried chicken, salmon patties, cornbread, chicken & dumplins, mashed potatoes, macaroni & cheese, tons of veggies, and then the best yellow cake with hot fudge sauce you've ever tasted.

An attempt at chocolate fondue for Valentine's Day for a now-ex boyfriend. What a mess! (both the fondue and the boyfriend)

Marshmallow Treats
Very easy to make, and rave reviews from my taste testers. I doubled the recipe...used 1 stick butter, 1 16 oz bag of mini marshmallows, and 11 cups of cereal. I found that I think they come out better if you press them into a greased 10x15 jellyroll pan instead of a 13x9. Using a 13x9 made them too thick. I made three batches last night...one with plain Rice Krispies, one with Cocoa Pebbles that I topped with mini chocolate chips, and one batch of Fruity Pebbles. They're all great!

Mini Cheesecakes I
I can't believe how wonderfully these turned out! It was my first chance to make cheesecake of any type, and now I can't wait to try for the real thing. I followed other reviews and made my crust out of 2 cups graham cracker crumbs, 1 stick melted butter, and 8 tablespoons sugar. I put about a half tablespoon in each liner. They baked up beautifully, and were really easy! I made 2 batches of 48 mini cheesecakes each. I left 24 plain, topped 24 with strawberry pie filling, 24 with blueberry pie filling, and then did 24 with chopped pecans, mini chocolate chips, and drizzled caramel over the top. I used the Kraft caramel bits. So easy and the looked great!

Easiest Peanut Butter Fudge
Turned out fine, but no one cared for the taste. I think it would taste better with white sugar than brown sugar.
