About this Cook
I am a happily married mother of 2 grown children. My 35 year old son has 2 daughters, Megan (14) and Madison (8). My 25 year old daughter just got married last year and lives in Irving, TX. For years I had a high stress, time consuming job, but I was finally able to quit, and now I work 3 days a week in a used book store. I love reading, so this is a great job for me and stress-free! Since I have much more time (thanks to my wonderful husband!), I am really enjoying my kitchen and learning new dishes.
My favorite things to cook
Dinners that are really delicious but also healthy, low-fat, and nutritious for myself and my husband. I want to keep him healthy and happy because he is such a wonderful husband, father, and all around great guy. And I've had 26 1/2 years of marriage to him to learn to appreciate him.
My favorite family cooking traditions
Our family used to get together for a meal for all of the important holidays, and my sister and I still do this. Since I came to enjoy cooking only in the past few years, she is the one who learned to make our mother's chicken and dressing, chicken and dumplings, lemon ice box pie, biscuits, etc. while Mama was still with us. I don't try to compete with that, but am developing my own traditions.
My cooking triumphs
My husband thinks everything I make is great and both of my children have their favorites. My current favorite is the dinner I fixed last week using basic recipes with a few of my own tweaks and modifications. The basic recipes were Yummy Pork Chops and Superfast Asparagus from this site, and a slaw recipe that I modified from a South Beach Diet recipe.
My cooking tragedies
Since I cook more by smell than tasting, I really blew a recipe for gazpacho for a group dinner when I had a cold. It just didn't smell right and I kept adding things to "fix" it. When it was finally done and chilled, it didn't taste good at all! Too much of several things. Don't tamper with the recipe when you've got a cold. :) Thankfully, my contribution was to be soup or salad, and I knew that some people wouldn't care for gazpacho, so I also had a salad prepared.

Chicken Stir-Fry
A great recipe. After reading reviews, I doubled soy, ginger, and garlic and added a dash of salt. I also used the veggies I had on hand (snow peas, broccoli, bell pepper, red onion, baby bella mushrooms, and water chestnuts) and served it over wild and long grain rice. My husband and I both loved it. Thanks for this recipe. I'll definitely be fixing it again soon.

Superfast Asparagus
We love asparagus, and I was looking for a quick recipe. Read the reviews, tried this, added a tiny bit of garlic salt (Cajun seasoning has salt in it, so can't use too much), and we loved it. I've had asparagus in really expensive restaurants that did not taste as good as this. My husband raved about it. Thank you so much for this recipe. I will most definitely use this recipe often!

Yummy Pork Chops
August: I'm always looking for new ways to cook boneless pork chops, and this one was super! I followed the recipe exactly, using a very good bottled "lite" Italian dressing and I put it on to marinate before I went to work. I did add some quartered baby portabella mushrooms a few minutes before the pork was done. Will definitely make this again. Soon. October 5th: Okay, a month later I've cooked this recipe 2 more times, and it just keeps getting better. I always use a good quality Italian dressing, quartered baby portabello mushrooms, and lite soy sauce and I wait until boneles pork chops are on special. I did not have time to marinate tonight, but fixed it anyway with Superfast Asparagus (best asparagus ever - recipe this site, but rolled in extra virgin olive oil instead of pan spray and added some garlic salt). I usually add either wild and long grain rice or mashed potatoes. Quick, easy, economical. Both pork and asparagus recipes are the "best of the best" as far as we are concerned. Thanks to the people who submitted both.
