Pumpkin Cream Cheese Muffins
These turned out ok. I used fresh baked pumpkin in place of canned pumpkin. The batter was still dry when I combined the wet and dry ingredients, so I added a bit of milk. Had to be the fresh pumpkin. I was worried they wouldn't rise since I had to do that extra mixing, but they rose well. I only gave 3 stars because it needed more spice (I added 1 1/2 tsp pumpkin pie spice), because the cream cheese "filling" just sat on top (even though I followed another reviewer's tip to burrow it down in the batter), and because the batter had entirely too much sugar. I think 1c would've been plenty. If I make these again I would omit the sugar topping, cut the sugar in 1/2, and either swirl the cream cheese with the muffin batter when I add it to the cups or spread it evenly on top, but I think all the extras take away from the pumpkin flavor.

Cinnamon-Raisin Granola
This granola is so good! I just made some to add to my homemade granola bars since I didn't have any trail mix. I made a few changes: 1)added walnuts and craisins, 2)used apple pie spice in place of cinnamon, 3)omitted the cocconut and vanilla (forgot about vanilla but I didn't miss it). It tasted so good I didn't want to add it to the granola bars! I'll definately be making this again.

Easy Granola Bars
Very good! I added 1 1/2 c rice crispies, 3/4 c Bear Naked All Natural Granola, 2T wheat germ, 2T flax seed, and left out the coconut, chocolate chips and raisins. They were SO good. Only gave 4 stars because they aren't very healthy as written, but this is a great base recipe that can easily be modified to suit your taste. I didn't have any problem with crumbling, sogginess, or sticking to the pan that some reviewers mentioned. Next time I'm going to try using evaporated milk and honey instead of the sweetened condensed milk. Thanks for the recipe!
