Beer Dip I

I've made this a couple of times now and absolutely love it. I've used Samuel Adams Summer Ale and Oktoberfest and both were very good in it. I think I add more than 1/3 cup, though...probably closer to 1/2 or 3/4 and then let it chill for a couple of hours. The longer it chills, the stronger the beer flavor. Wonderful with pretzels. Thanks for the recipe!

Emily's Famous Hash Browns

As per Helen's review, I microwaved on high for 2.5 minutes after drying thoroughly. Added 1/2 tsp. onion powder and 1/8 tsp. garlic powder to the flour instead of the med. chopped onion. Added a small amt. of olive oil and butter to a griddle and cooked like pancakes, approx. 5 min. per side. These were so tasty! Everyone liked them and they were very easy to make. Thanks!

Sweeper Steak

I used at least 3-4 lbs. of steak, can't remember what cut, cut into small cubes, a large onion, one green pepper, several cloves of garlic and at least a lb. of fresh sliced mushrooms. After reading some of the other reviews, I added a little worcestershire sauce too. I had the time so I made this on top of the stove in my cast iron french oven...just let it go for a couple of hours. It came out very tender and the time gave all the flavors a chance to meld. Everyone approved and all the leftovers were consumed within 24 hours! I will be making this again. Thanks!

Cinnamon Griddle Cakes

I didn't have corn syrup but made all the rest as written. Very tasty! Instead of frosting, my sons wanted theirs with Cool Whip. They requested that these be made again! I put butter and maple syrup on mine...mmmmm good! Thanks for a great recipe!

Tex-Mex Beef and Cheese Enchiladas

I wanted to use a full 3 lbs. of ground beef, so I used the calculator and used those amounts. The only change was I used 4 c. of water instead of 6 and a 15 oz. can of tomato sauce. Had to use my extra large lasagna pan to fit it all! Also heated the flour tortillas for a few seconds in the microwave rather than use the oil. Topped with a combination of Colby and Monterey Jack and sharp Cheddar shreds. It came out wonderfully! We will definitely be making this again. Thanks so much for the recipe!

Terry's Texas Pinto Beans

Made these without the jalapenos, still quite tasty. Left the salsa on the side for people to add as desired. My beans soaked overnight and they still required a long cook time. Will make them again! Thanks!

Banana Nut Muffins

Tuna Noodle Casserole from Scratch

I made this for dinner tonight. My husband and sons all enjoyed it as is. I will make this again but will tweak it, as many other reviewers have. White wine added to the sauteed veggies, chicken broth to the roux, more garlic and any number of fresh herbs to perk up the flavor. It's a good basic recipe with lots of room for experimentation! Thank you!

Grandmother's Buttermilk Cornbread

This was fantastic! I made it exactly as written and it turned out perfectly. I had to make a second one the next day to give to my mother because she is a cornbread fiend, and my sons had already eaten all of the first one. This is definitely a keeper. Thanks so much for the recipe!

Butterscotch Bread Pudding

Made this for a son that loves butterscotch waffles. I used 1 cup of Splenda/brown sugar blend, a couple of shakes of cinnamon, 1/2 cup raisins soaked in hot water and 3/4 loaf of Italian bread. It was wonderful straight out of the oven, and even better after cooling off. We put away a little in the fridge, but I'm sure it will be gone by tonight! Thanks for the great recipe!

Egg Casserole

I used a full 2 pounds of Jimmie Dean sausage and 3/4 of a loaf of Italian bread torn into small chunks. I layered the bread into the pan first, added the wet ingredients next, pressed into the bread, then added the cheese on top. I also added sauteed onion and green pepper pieces to half the pan on top of the cheese, for my family that can't agree on these things! It did take longer to cook and melt the cheese, probably another 15 minutes, but it was very tasty and we will make it again!
