Black Bean and Couscous Salad
Very good recipe! I followed it to a tee, took it to a party, and everyone raved over it. No one believed I actually made it myself....thought I'd picked it up from a restaurant! Thank you for the great recipe!

Ruth's Red Lentil and Potato Soup
This is very good. I loosely followed the recipe - used olive oil instead of butter, didn't add the Kale or the file powder, used chicken broth insteadof vegetable, tripled the cayenne, added some cubed tofu and used about twice the amount of lentils. It came out very good! Perfect served over some jasmine rice! Thanks for the recipe!

Renaissance Stuffed Mushrooms
Excellent! I even messed up part of the recipe and they were still great. (I cooked the chopped stems in the garlic and oil, rather than the caps.) All of my guests raved about them. I will definitely serve these again.
