Campbell's® 15-Minute Chicken and Rice Dinner

This was really, really bland. I even added salt, cayenne, garlic and onion powder and chicken bouillon and it didn't stand out. I was really disappointed, because it sounded so good when I read over the ingredients.

Easy Pumpkin Muffins

These are so ridiculously easy and the absolute best pumpkin muffins I've ever had! I used a white cake mix, and used pumpkin pie spice along with cloves and a teaspoon of vanilla extract. I like it spicy! Make sure you pay attention to the shape of them when you fill the cups because they don't expand much and whatever shape you made them is pretty much how they stay! A definite keeper!

Surprise Banana Cake

I took another person's advice and made cake flour, which does give it a nice texture. Cut flour to 1 3/4 cups, and add 1/4 cup cornstarch. I added eggs, vanilla and bananas to creamed mixture first. Mix dry ingredients together then add the dry ingredients a little at a time to the wet ingredients. I did not use unsalted butter, just salted butter, but the salt level was fine. I found the 30 minute time to be on the dot. You can add another banana or a little milk if the batter seems really thick, but I made a double batch using 9 large bananas and they turned out perfect. I frosted them with Buttercream frosting from this site and took one cake to church tonight and it was a HUGE hit! We only had about 15 people and I think they would have eaten both of them if I had taken both with me!

Buttercream Frosting

This is also yummy with almond extract! My mother used to be a cake decorator and this is just like hers! For a flawless finish, use shortening instead of butter, and use a metal spatula with a smooth edge. Let your frosting dry. Dip spatula in VERY hot water and smooth frosting, wiping spatula frequently. It will end up almost as smooth as fondant and be a beautiful canvas for your handiwork!

Slow Cooker Pork Chops II

Delish! I didn't use the oil, though, as I'm trying to cut down on fat. I just upped the broth the extra amount and towards the end, I stirred in a little fat free sour cream to make a yummy gravy. These go well with egg noodles, rice or potatoes! Definitely not the ordinary crock pot recipe!

Cream of Mushroom and Soy Sauce Pork Chops

The sodium content scared me to death, so to lower it, I used low sodium soy sauce and low sodium soup. I also didn't marinate mine in the soy sauce, but coated it lightly after the brown sugar was put on. I used four nice thick chops and cooked it a long time (7 hours)and it just fell apart. And because it's meat, I just had to add a little garlic...Very good!

Whole Grain Bread Pudding with Caramelized Bananas

I just pulled it out of the oven 5 minutes ago and hubby ate two bowls of it already! I used toasted white bread, as I had no wheat bread. I also added 1/2 teaspoon each of nutmeg and cinnamon. I baked it in a casserole dish instead of individually, and had to bake it for 1 hour, 15 minutes. It needs something, though, perhaps butter.

Five Ingredient Ice Cream

Delicious and super easy! I took it to a church dinner and everyone raved about how creamy and perfect it was. Not too sweet and not grainy at all. Easy to make different flavors, too.

Old-Fashioned Vanilla Pudding

This is just like I remember making as a child with my big sister! The butter adds a nice touch, since I use lowfat milk. I tripled this to make banana pudding, with the layers of vanilla wafers and banana slices, and it was a hit with my hubby! I might toy with stirring in chocolate chips or creamy peanut butter to make banana pudding next time, but this is just yummy the way it is!

Army SOS Creamed Ground Beef

Not too bad, but it wasn't the same as the one my army dad used to make. I make mine with onions, garlic and mushrooms that I add while the beef is browning. I also take the easy way out and use cornstarch instead of flour. I prefer to serve mine over rice or egg noodles instead of toast, but that's just a personal preference. If you are looking to trim some calories, use very lean beef and use water instead of milk. You may need to up the amount of beef base/bullion. Just watch the salt, as it's in the bullion as well as the Worcestershire sauce.

Best Big, Fat, Chewy Chocolate Chip Cookie

These taste great, but they hardened up when they cooled down. They still taste great with coffee or tea, though. I doubled the recipe and used a mixture of semi sweet and milk chocolate chips.

Bacon Gravy for Biscuits

I grew up on this! Most people know of sausage gravy and biscuits, but I had not until I was married with children of my own and moved to North Carolina. In my house, we always ate bacon gravy and biscuits, sometimes as an evening meal! It is so simple and absolutely deliscious, but I would suggest that you buy lower sodium bacon, it does help cut down on the sodium count. If you use regular bacon, make sure to add it to the gravy before you test it to season it or you will make it taste briney. This is also deliscious served with scrambled eggs and fried potatoes. I would suggest upping the recipe by at least double, as the suggested amounts would make a very small amount which won't serve many. Enjoy!
