Classic Bran Muffins

I loved these! They were super yummy. I added dried cranberries instead of raisins, apple sauce instead of oil, 2 egg whites instead of one egg, and a 1/2 tsp of cinnamon. Great for breakfast!

Healthy Banana Cookies

Reviewed: May 12, 2009
I am giving this recipe five stars because it is a great recipe to build from. Even if you add little things you aren't supposed to (like sugar or chocolate chips) it's still much healthier than many of the other cookies out there. It isn't meant to taste like a sugary treat (Obviously) so think of them more as slightly sweet fruity granola bars...lol. These were the changes I made to the recipe: *I used two banana's instead of three. I only had two or else I would have used all three. *I diced up a small granny smith apple instead of using dates. *I used a 1/2 cup more of rolled oats. *I added a tsp of cinnamon. *I added a little less than a 4th of a cup of honey. (I would guess) *I added three tablespoons of chunky peanut butter. *I cheated and added less than 1/3 cup of sugar... but still am not sorry I did haha. I really enjoy these cookies as a healthy snack. You can do so many different things with this recipe. It keeps me from digging into the Oreos or other junk food goodies my Fiance has to buy.

Peanut Butter Cup Cookies

Peanut butter and chocolate will always be one of the best mixes! I loved these as did everyone who devoured them. Do make sure you freeze the peanut butter cups so they don't get all melty when you are pressing them in. :)

Honey Baked Chicken II

I thought that these were wonderful. I did use Dijon mustard as suggested and less paprika. I LOVE spicy but my boyfriend, not so much. I am sure I will use this recipe again. I enjoyed it with garlic mashed potatoes as one of the sides. Then you get a little bit of salty and sweet.

One Bowl Chocolate Cake III

This was amazing! I have always been the only one in my family that loves chocolate cake, and this recipe wowed even the pickiest of eaters. My fiance's brother in law is a chef and he asked me to make this cake for his birthday. Not one person had a bad thing to say about this cake. This will ALWAYS be my new chocolate cake recipe! Thank you for sharing :)

Meatloaf with Fried Onions and Ranch Seasoning

Reviewed: May 23, 2008
This was very good. I tried to save some for a friend that was coming over and everyone begged me to hide what was left! I did change a few things. I used less of the fried onions because i felt like the whole can may be too much for me. I used about 1/3 of it. I added about 1 tsp of garlic salt. I also added 1 Tbsp of sour cream so it wouldn't be dry and a few shakes or worcestershire sauce. After i formed the loaf, I made a glaze of ketchup and 1 sprinkle of worcestershire. I miked it in a shallow bowl then glazed the top. I had to cook mine longer than suggested, about an extra 15-20 min (I dunno why though) But about five minutes before it was done I added shredded cheddar cheese to the top of it, then placed it back in the oven. It will be my new recipe. It was very much enjoyed by everyone :)

Red Garlic Mashed Potatoes

Reviewed: May 23, 2008
Oh my gosh! these were amazing! The best mashed potatoes i have ever had. I just made a few changes because some things i didn't have. I did not use any sugar because I am not big on sweet. While boiling I used 1 tsp of garlic powder and 1 tsp of garlic salt. I also added a pinch of salt and pinch of ground pepper. Then when i was mashing the potatoes i added 2 tsp of garlic salt, 1 tsp of garlic powder, and 1 tsp of the steak seasonings. Then to make it pretty I added a few shakes of parsley. I made gravy with these and they didn't even need it at all! If you like your potatoes very flavorful this is the way to go. My picky roommates DEVOURED them. Thanks for the awesome idea :)
