Chicken Cordon Bleu II

Reviewed: Nov. 20, 2009
Oh my god, this was sooo good, I am so happy that I can finally make a meal that would be worthy of the fanciest of restaurants :) Making this dish was kind of a spur of the moment thing, so I had to substitute some of the ingredients, but it turned out so great that I think I will make it with these alterations the next time too, and BELIEVE ME, there will be a next time! I didn't have any heavy cream, or even milk, so I used sour cream and a little water, worked great! Used strips of bacon instead of ham, I wrapped it around the cheese, I think this helped prevent the cheese from escaping from my chicken during cooking :) I also added garlic powder, onion powder and some salt and pepper to the flour mixture, and I used 3Ts butter and 3Ts olive oil as a lot of other people suggested. Didn't use tooth picks or string or anything, but my chicken held together just fine. And finally, if you make this dish, be sure to double the amount of sauce, it's out of this world!

Dishpan Cookies II

Reviewed: Jun. 16, 2009
Reading all the great reviews on this one I was expecting some delicious cookies, but unfortunately I was disappointed :( I thought they were waay too sweet, even tho I used unsweetened coconut the sugar just seemed to overpower all of the other flavors. The cookies came out very chewy (which I like) but too hard even tho I didn't over bake at all. My boyfriend liked them, but then again, he would eat sugar out of the jar if he could. Probably won't make again.

Ranch Dressing II

Reviewed: Jun. 1, 2009
So good and easy to make, love that I always have all the ingredients on hand. I don't like dressings that taste too much like mayo, so I used 1 cup sour cream and 1/2 cup mayo, and it turned out perfect! I used it to dip Boneless Buffalo Wings from this site, along with carrot sticks and bell pepper. Delicious!

Boneless Buffalo Wings

Reviewed: Jun. 1, 2009
Finger lickin' good! I ran out of the flour mix about half way through, and had to make more, next time I will double it. I didn't deep fry, just placed the chicken pieces on a baking sheet, sprayed with cooking spray and baked about 20 mins at 200 degrees C (400 F). Turned out delicious and crispy! Served with Ranch Dressing II from this site, along with carrot sticks and bell pepper for dipping. After we had eaten I realized I forgot the whole hot sauce/butter thing, can't wait to try it again with it :)

Vanilla Ice Cream VIII

Reviewed: May 30, 2009
I had to try this simple recipe! I don't have an ice cream maker, so I just combined everything in a bowl, put it in the freezer, and then took it out every 30 minutes or so to beat the mixture with a hand mixer. Consistency turned out great, but unfortunately waaay to sweet for my taste :( I was thinking of throwing the entire batch out when it occurred to me to try adding some lemon juice to balance out the sugar, and what do you know, suddenly I had the most delicious lemon ice cream ever! :)

Pleasant Pork Chops

Reviewed: May 13, 2009
These pork chops always come out so incredibly moist and delicious! The only thing I change is upping the garlic to two cloves and adding Cajun seasoning in stead of paprika if I have it on hand. Also I usually use only four chops, without reducing the amount of sauce - there's never a drop left!

Lime Chicken Soft Tacos

Reviewed: May 13, 2009
I would probably rate this recipe a strong four as is, but I just have to give it five stars because with just a few alterations this has become one of my all time favorite meals! I leave out the oregano, add 1 tsp ground coriander (I use fresh coriander (cilantro) for "special occasions", I live in Norway where fresh herbs can be hard to find and too expensive for our every day meals, but I definitely recommend using it if it's a bit more budget friendly where you live), 1 tsp ground cumin, I double the amount of lime juice and add about 1/4 tsp of cayenne pepper. Also, the serving suggestion is way off, I usually half the recipe to serve 5, and that is just enough for me and my boyfriend.

Fish Tacos

Reviewed: May 9, 2009
This is my first review on this site, I just had to comment on this recipe - it's so easy and goo-oo-ood! I used frozen battered fish fillets (I really don't like the hassle of deep frying) and served with homemade pico de gallo. The white sauce and cabbage tastes so unbelievably good together, it's like they're long lost soul mates or something :D We had a little left over the next day so we eat tortillas with just white sauce, cabbage and pico de gallo for lunch, I almost didn't miss the fish at all, so I guess you could even make these vegetarian tacos!
