I was lucky to have a mom that made homemade dinners for us pretty frequently, so I learned to bake early on. I started with my favorite desserts from her recipe box, and I still go back frequently! It took until I was on my own though to love cooking meals, too and now I have an appreciative husband to experiment on!
My cooking tragedies
As a poor college student I thought I'd be fancy and make some zucchini bread from a neighbor's recipe. The recipe was missing the flour, but I baked it anyway despite misgivings. To my horror I found that not only was it in need of flour but an extra loaf pan too! I ended up with three quarters of the dough on the bottom of a just-cleaned oven and blackened crust left inside.

Beef Taco Skillet
This is one of the standard recipes in my household that I can't kill. I've given it to friends too, and some substitutions we've made when we really want this is a can of chili with meat or refried beans in place of the ground beef, tortilla chips in place of the tortillas, added textured vegetable protein or onions to the ground beef...basically it's a great base for anything as long as it goes with the flavor of the tomato soup. You do have to be willing though to eat very soft tortillas, and chips are even softer but they blend great!

Spinach Crescents
These were tasty, and had a strong spinach taste. If that's not what you like, this will definitely need more seasonings! I had extra filling left over, but wasn't measuring exactly-I would suggest having an extra can of crescent rolls available just in case.

Black Bean Spinach Pizza
I found the spinach on top to not catch any of the flavor underneath, since neither of us wanted hot pepper sauce! Next time I will sprinkle half of the seasonings on top of the spinach.
