Crema de Calabazines
This is a very tasty soup:) And incredibly easy and fast. Instead of the cheese, I used 6 fluid oz milk with 2 tablespoons cornstarch. I will definitely make it again!

Zucchini Relish
Since I'm not a big fan of raw zucchini and onions I decided to try this in the skillet. Seasoning was wonderful and the vegetables complement one another well!

Simple Mexican Rice
This recipe really was easy and made with ingredients right at hand. Instead of cumin I used coriander so the flavor was a little lemony. But I still thought it was great. Will make again.
