This was so easy to do (I was catering a film set, so a casserole was a must)! I used turkey instead of chicken and precooked/cut instead of raw. I also used a lot more cheese than the recipe called for...everyone loved it! I will have to make this sans the poultry and use more veggies (like corn and carrots) for myself. :)

Easy Chicken Enchiladas

This was such an easy recipe to follow! And it's pretty easy to modify. I decided to use vegetarian "chicken" instead of the real stuff and it turned out really well. I think that next time I will cut back on the cream cheese and add more salsa (I used garlic/lime salsa) because I thought it was a bit rich and mild.
