Curried Quinoa Salad with Mango
I really wanted to like this recipe - it had everything in it that I like. Unfortunately, the flavour combinations just didn't work for me. The dish overall was very, very sweet, too much so for my taste. I even tried adding red onion and celery as other suggested, but that didn't help. I still have half the recipe remaining and will try a couple things to cut the sweetness, but as is, this is not the recipe for me. Thanks anyway for sharing, Cinderella - I look forward to trying some of your other submissions!

Okra, Corn and Tomatoes
Made this for the second time last night and it was as good as I remembered. Okra is "new" for me - after experiencing the slimy sort when I was a kid - and I'm so happy to be able to introduce my kids to okra with a great recipe like this! Completely non-slimy!! Added a couple cloves of garlic with the onion, used about a tbsp of olive oil to saute the onion and garlic, and didn't have any file powder, so used some Cajun seasoning. Also used a combination of fresh and canned tomatoes, and fresh okra from the farmer's market. So glad I tried this - you won't be disappointed!

Butternut Squash Risotto
Oh, YUM! This was my first time making risotto, and this recipe turned out great! Left out the wine, because we didn't have any in the house. Used several tips from previous reviewers: mixed cinnamon and nutmeg in the butternut puree, added about 1/3 of the puree with each addition of the broth. I also tasted and adjusted the salt and pepper just before each addition of broth.Added freshly grated pecorino at the end and the flavour was lovely - sweet and just salty enough with a little bite from the fresh ground pepper. Definitely will make again and again and again!
