Low-Fat Blueberry Bran Muffins
I used buttermilk (1tsp lemon juice to 1 cup milk), and 1 cup of whole wheat flour instead of 1/2 and 1/2. Then these muffins were to die for!

Grandmother's Buttermilk Cornbread
Absolutely perfect results with this recipe. Next time I will reduce the sugar...I also used sour skim milk intead of buttermilk and it still turned out perfect!

Spicy Chicken Rice Soup
Add two tablespoons of Curry powder for an EXCELLENT cold day soup! I also substituted brown long grain rice for the white stuff and sauteed the celery and onion in butter before adding the broth and other ingredients. This meal was hearty, filling and delicious!
