Quick Quiche
Wow! This recipe was outstanding. What a refreshing change from the traditional quiches. I added chopped spinach and another egg since I used a larger dish. I will certainly make this again!

Chicken Enchiladas II
This recipe is awesome! I didn't use roasted chicken from the deli, because they were out. I seasoned and boiled some frozen chicken breast tenderloins and added about 3/4 cup of diced onion. I then shredded the chicken. I also mixed about a cup of chunky spicy salsa to the reserve sauce that I topped the enchiladas with. My husband LOVED this dish and raved about how good it was. This is definitely a keeper... Thanks Steph!

Delicious Ham and Potato Soup
Excellent recipe! I didn't have any celery, so I used a can of cream of celery soup instead. I also omited the chicken broth cubes and the roux, because it was thick enough with the soup. My husband loved this soup and I will definitely make this again!
