About this Cook
I'm a mom of a toddler who will graduate with my bachelor's in Sociology in one more year. This summer I'm taking time off from school while my husband goes full time, so I'm a stay-at-home-mom for a little while and loving it! I use most of my free time to read, quilt, and hang out with other moms.
My favorite things to cook
Homemade spaghetti sauce, chili, soups and stews, anything in the crock pot, barbacoa pork salads, homemade salsa, ice cream, cookies, banana muffins, and anything I find a tasty recipe for!
My cooking triumphs
I've taught myself how to make some really delicious soups and stews. I'm also really good at throwing together great Italian food, but that's because of an old roommate I had who lived in Italy for a couple of years.
My cooking tragedies
When I was pregnant I was craving coffee cake, so I decided to make some. My big mistake was when I put it in too small a dish. After the timer went off I opened the oven door to find batter overflowing onto the bottom of my oven and all the racks. What a mess! I was so disappointed!

Artichokes
Maybe I did it wrong, but mine came out not very good. It was done, but it smelled and tasted awful. I trimmed it and took out the middle part like others suggested and put some butter on it before I steamed it -- maybe that was the problem? I don't know that I'll be trying this again soon. I rated it in the middle because it won't let me write a review without rating.

Creamy Rice Pudding
Excellent! I liked it with the amount of sugar called for. I also followed instructions to use short or medium grain rice and test the rice for doneness before adding sugar. And I added vanilla, cinnamon, and nutmeg.

Oat Applesauce Muffins
So good! I made mine with white flour since I don't have wheat flour in the house, but I'll try that as soon as I get some. Also, if you use a 1/4 cup measuring cup as your scoop it makes exactly as many muffins as it says it will. My 3 year old and husband loved these! What a great recipe!
