My favorite things to cook
I enjoy cooking regional foods from Greece and Italy. I also love to make all kinds of desserts. I also love to entertain and cook for large groups.
My favorite family cooking traditions
In our house both my husband and I cook. We have a harmony in the kitchen and we truly enjoy cooking and creating dishes and trying new recipes. Holidays at our home are a food lover's delight as well often try new recipes as well as our family favorites. We never let a person leave our house hungry and when we make anything, it is always in big quantities so we can share!
My cooking triumphs
Last September (07') I made several hundred greek pastries and chocolate lolipops for my daugher's baptism in one week while having a 6 month old,a two year old and a nine year old. I did not fall behind on my housework, I did not stay up late ~ I did it all by myself with very meticulous planning. I did not burn a thing!!!!

Red Garlic Mashed Potatoes
Another great sidedish that my family truly enjoyed! I omitted the sugar completely and added milk instead of half and half. I would make this recipe again and will most likley add it to my holiday dinner menu!

Asparagus with Sliced Almonds and Parmesan Cheese
I made this as a side dish for a Sunday family dinner and received wonderful reviews on it! The only thing I did different was that after I bolied the asparagus, I drained them and then immediately put them in ice water. I laighly sauteed the almonds in butter and then turned the heat down and added the asparagus. I added the cheese after I removed it from the pan to elliminate a big string mess and to make a great presentation. This is a great way to get your kids to eat asparagus and almonds are an excellent source of nutrition!

Kalamata Pork Tenderloin with Rosemary
I have made this recipe several times and it is a huge hit with my family. I am Greek and we all enjoyed the wonderful aroma of this dish. I did of course change the recipe a bit. First I tenderized the meat real good then I made a marinade using wine, lemon juice, EVOO ( extra virgin olive oil),rosemary and cut up pitted kalamata olives. I let the meat soak in this for about 1/2 hour. I then follow the rest of the recipe according to how it is written. The difference is incredible as far as taste. When cooking meat, it isn't just the taste but the wonderful aroma the accompanies the dish. I served the meat with red greek style potatoes and greek style green beans with feta and regular kalamata olives as an appetizer. This dish is favmassio! OPA!
