Slow-Cooker Chicken Tortilla Soup

We loved this recipe! I was dying to have Chicken Tortilla Soup (something like Max & Erma's) without a lot of work and this turned out to be perfect! So delicious! I used about 1.5 lb. of chicken (just my pref). I did not cook it first to save a step and the chicken was fall apart tender. Used the larger sized can (15 ounce?) of enchilada sauce since I had more chicken. Oh, and I used a can of corn instead of frozen. Made the tortilla strips just as directed - they are so easy to make - but I don't ever buy the store bought ones (YUK) so didn't find it inconvenient. Some might, but they should seriously reconsider that.

Samosas

I was having my doubts about the dough mid way through making it. I ended up using more water to get the dough more "elastic" - I was reaching almost a full cup but then I just stopped and dealt with it as is, for fear up messing up the entire recipe. The meat (beef not lamb) cooked fine. Smelled even better. But when I had to add it to 4" "half circles" I laughed. No way that can be done is such a small tiny bit of space (not without taking an hour to assemble them/using all the dough called for). So I started making bigger circles, but half way through THAT I noticed that the "completed" ones sitting out waiting to be fried were oozing some liquid. They were not by any means full or stuffed. But the oiliness from the beef makings made the seals open. I tried to fix them but I made it worse. Next time someone might take the time to follow their own recipe and make sure the instructions are well written and yield good results. *I'm now going to try and find a recipe to use for that left over samosa beef*

Penne Pasta with Spinach and Bacon

It can't get easier than this! I came across the recipe looking for ways to use left over (wilting) spinach. I just so happened to have a box of bowtie pasta, and some uncooked bacon too, and the staple garlic! I made this in less than 20 minutes. I surprised even myself! And it was GOOD! Perfect light, quick meal before you head out the door. I love simple pasta salads like these, and this one is definitely joining the rotation.

Cowboy Oatmeal Cookies

I made these last night and they were fantastic! Even better after they have cooled completely, and they even warm up well in the microwave, or toaster oven. I added the 1 tsp of Vanilla Extract and the additional cup of oatmeal like reviewers suggested. The recipe makes A LOT of cookies. I used a 1 tsp scoop so the cookies were small, but even if you were making bigger cookies, this recipe make plenty :) I finished scooping the rest of the batch and froze it. I hope they work out when I want to have them again :) Next time I will cut down on the sugar by 1/2 cup and see if I like that just as much.

Sharese's Spaghetti Salad

I liked it - but I altered this recipe some for cooking ease, and to get the tastes just the way I like - for that I give it 3 stars. It did turn out wonderful, even when I didn't think it would because I came back from the grocery store without some ingredients, and with ingredient substitutions. It's a great recipe to inspire you to make your own.
