I'm the kind of person that hates wasting food, and money. Dining out is a HUGE waste of money so I'm always trying different dishes. All the foods that I like to eat out - I recreate/cook at home - I get better quality food, better tasting food, better portions and I get better at cooking.

Beef Enchiladas, Guacamole Dip, Beef Chili, Tostadas, Tacos, Macaroni & Cheese, Shepherd's Pie, Cold Salads, (Puerto Rican) Rice w/ red beans and stewed beef, Chicken Tikka Masala w/ Basmati rice
My cooking triumphs
Tacos (Jack in the Box style): It took a long time to perfect the frying, and assembly, but after a lot of trial and error, a few burn marks, and a dash of personalized flavors - I'm a pro!
My cooking tragedies
Garlic Nan (bread). But I'm not giving up.

Chicken Alfredo with Fettuccini Noodles
I made this a couple of times following the recipe to a T (adjusting only for smaller portions). But after trying the similar recipe Chicken Fettuccini Alfredo on this site I've tried seasoning it a little bit more, reducing the butter content, and using the part-skim milk ricotta cheese. I also sauté the chicken with fresh garlic, salt-pepper, and Italian seasoning. It still turns out perfect and never disappoints. This is my favorite Chicken Fettuccini Alfredo recipe - I will never loose it this recipe.

Chicken Fettuccini Alfredo
This is a well seasoned Chicken Fettuccini Alfredo recipe. I really liked it but I didn't love it. When I wanted to have it again I went with the Chicken Alfredo with Fettuccini Noodles recipe. I felt bad for liking something less fancy, especially because there is absolutely nothing wrong with the recipe, it really is great and it deserves 5 stars.

Balsamic Bruschetta
This is how I've always made Bruschetta. Nothing can go wrong with this recipe. Unless you don't use fresh ingredients. Fresh is the key for Bruschetta. Even shred your own cheese.
