I took another users suggestion and adapted this for breakfast. I used hot pork sausage and cooked green chilis in with it while browning. I also used medium enchilada sauce since we like spicy food and I use 6 eggs. I left off the sour cream since my husband doesn't like it and I wasn't quite sure how it would taste with the sausage. When I first read the recipe, it sounded like too much work and I was skeptical on how the whole thing would cook, but I am so glad I tried it. I have made this twice and it will definitely be a regular for our weekend breakfast! Thanks!
