Hot Bacon Dressing
I have been looking for a recipe like this for awhile. It is SOOO YUMMY! I wanted one that was easy and with ingredients I already had. Taste like the version you get in the restaurants.

Eggplant Au Gratin
Very delicious. I poured over a bed of pasta. A definite keeper.

Eggplant Tomato Bake
very delicious! I did combination of feta, mozzarella, and parmesan cheese. I rubbed the eggplant with olive oil and sprinkled top with an Italian seasoning. Tip: if you think eggplant has a bitter taste, then before you cook sprinkle with salt and let sit. It draws the bitterness to the surface.
