Green Beans with Almonds and Caramelized Shallots

I normally hate green beans, but my husband likes them, so I decided to try this recipe for something different. They were great (well, for green beans.)

I grilled the mushrooms and they turned out great. As others have commented, they were very juicy... which is good, except the bottom of the bun turned quite soggy. Next time, I will try to press or drain out some of the excess moisture.

Mock Apple Pie

I incorporated this recipe in a lesson for 5th graders about the chemistry of taste. The kids LOVED it, and couldn't believe they were eating crackers. While the taste and texture are pretty convincing, this pie is no substitute for the real thing. This recipe is fun to make for the novelty of it.

Corn Bread Muffins

The second time I made these, I doubled it so I'd have enough to take to a party. I had several people ask for the recipe! They commented how they'd never had such moist cornbread. I included about 1/2 cup of canned sweet corn in the batter on the second go 'round. Didn't seem to change the recipe from the first time, and I like the added texture.

Grilled Steak Pinwheels

This tasted good, but it was tricky to keep it together, and quite a bit of the filling dripped out into the grill and created a smokey mess. I probably won't make these again.

Walnut-Cheese Spinach Salad

I'm embarrassed to admit that I forgot to put on the feta when serving this salad... but even so, my guests LOVED it and said it was the best dressing they had ever tasted. They were shocked to learn it was homemade. The only downside is the super long time it took to strain the raspberries (I also used frozen). Next time, I will buy some cheesecloth (I was using a strainer) and speed up the process.

Carrot Cake III

I have made this several times, both as cake and as cupcakes. Every time, it's a huge hit! (I always substitute applesauce for about 1/3 to 1/2 of the oil.)

Basil Cream Sauce

I made this for a pasta and chicken dish. I made the pesto a day in advance (storing in the fridge) so that I would have less prep while guests were here: all I had to do was add it to the cream. It worked great and received positive feedback from the guests!

Hearty Vegetable Lasagna

Traditional lasagna is one of my favorites, so I was hesitant to try out this recipe, but was serving dinner with few vegetarian guests. It was a hit! The meat is hardly missed.

Creamy Zucchini with Linguine

I prepared this pretty much as written, except I cut the zucchini julienne instead of dicing, and instead of browning, I cooked until it was just tender before adding the other ingredients. That way, it doesn't end up all mushy. My husband HATES zucchini, but couldn't resist seconds on this dish!

Tequila Steak

This marinade was great. I put it and the steak in a plastic bag instead of on a plate to ensure the whole surface of the steak was covered, rotating the bag over the course of 8hrs. My husband LOVED the flavor.

Basil-Lime Sorbet

The first time I tried this, it was a little too sour for my family, so for the second batch I added another half cup of simple syrup and it turned out GREAT. Also, it took longer than 2 hours to freeze the mixture (even starting with chilled simple syrup). I think this is best prepared a day in advance. This recipe is so easy and delicious, I will be making it several times this summer!

Vanilla Wafers I

I made these twice. First as written, but the dough was awfully sticky (even after chilling 5+ hours) and the cookies were not waferish and they were bland, as other reviewers have said. So the second time, I substituted condensed milk for half of the milk called for. I also added a tsp cinnamon. The dough was more workable, but I still wasn't impressed with the results. I will not save this recipe.
